CINNAMON-CHOCOLATE FUDGE

Cinnamon-Chocolate Fudge image

Steps:

  • Butter the bottom and sides of an 8 by 8-inch baking pan. Line the pan with a sheet of parchment paper, about 14-inches long and 7-inches wide, allowing the excess to overhang the sides. Set aside
  • In a medium glass or stainless steel bowl, combine the condensed milk, cinnamon, and vanilla. Stir in the chocolate chips and butter. Put the bowl on a saucepan of barely simmering water and mix until the chocolate chips have melted and the mixture is smooth, about 6 to 8 minutes (mixture will be thick). Using a spatula, scrape the mixture into the prepared pan and smooth the top. Sprinkle with salt, if desired. Refrigerate for at least 2 hours until firm.
  • Run a warm knife around the edge of the pan to loosen the fudge. Remove the fudge to a cutting board. Peel off the parchment paper and cut the fudge into 1-inch pieces. Store refrigerated in an airtight container or freeze.

1 teaspoon pure vanilla extract
1 pound (about 2 cups) bittersweet (60 percent cacao) chocolate chips (recommended: Ghiradelli) see Cook's Note

Steps:

  • In heavy saucepan, over low heat, melt chips w/milk and salt.
  • Remove from heat and stir in walnuts and vanilla.
  • Spread evenly into wax paper lined 8 or 9" square pan.
  • Chill pan 2 hours or until firm.
  • Turn fudge onto cutting board, peel off wax paper and cut into squares.
  • Store loosely covered at room temperature.

Steps:

  • 1. Melt chocolate chips, dark chocolate chips and condensed milk in double boiler on medium heat. Once smooth remove from heat. Add vanilla, cayenne pepper and nuts. Scoop into baking dish and chill in refrigerator until set for approximately 10 minutes. Sprinkle additional cayenne pepper over top when time to serve.

1 c milk chocolate chips

DANGEROUSLY SPICY CHOCOLATE-CHILI FUDGE image

Steps:

  • Butter the bottom of an 8-inch to 9-inch square baking pan, and line with a square of parchment or wax paper. Put ingredients into a metal bowl set over a pan of gently simmering water, and stir the mixture occasionally to melt. It's going to be very thick. Spread mixture into the pan and chill until firm (or overnight). Run a warm knife around edges of pan to loosen the fudge block and flip it over onto a cutting board. Remove the paper, and cut the fudge into 1-inch squares.

1 lb high-quality dark chocolate, chopped (I used Lindt Excellence 70%)
1 Tbsp unsalted butter
1 tsp ground cinnamon
1/2 tsp ground cayenne
1/2 tsp ground nutmeg
1/2 tsp salt
1 (14-oz) can sweetened condensed milk

  • In a large, heavy bottomed pan, gently heat the milks and cream with the chilli quarters until it's hot but not boiling. Turn off the heat and leave to steep for ten minutes.
  • Add the sugar and salt and dissolve the sugar over a low heat, stirring occasionally. Once dissolved, fish out the chilli pieces and discard.
  • Turn up the heat and bring the liquid to the boil. Be careful as it will bubble high up the pan. Lower the temperature to a moderate heat and boil for five to ten minutes until the temperature reaches 114°C (237°F). Alternatively use the cold water method to test (see note below). Stir occasionally to ensure the fudge doesn't stick and burn.
