SPICY GARLIC MAYO CHEESESTEAK
Steps:
- Prepare the Spicy Garlic Mayo first. Mix all ingredients together throughly in a small bowl and set aside in the refrigerator to cool. Cut the French rolls in half lengthwise. Cut the provolone cheese in half. Add a full slice (2 cut portions) of provolone cheese to one side only of each French roll and place on oven safe pan. Heat the stove top to Medium heat. Add the 2 strips of bacon. Cook the bacon till crispy. Crumble bacon into small pieces and set aside. In a large skillet add the all of the vegetables into the remaining bacon grease. Heat until onions start to caramelize (about 4-5 min). Take the vegetables off the heat and set aside in a bowl. Increase the stove-top to Medium-High heat and add in the beef. Add a pinch of Garlic Salt and a dash of Chili Oil for flavor. Stir beef until the beef just starts to turn brown (2-3 min). At this point you should turn the oven broiler on to Low heat and place the cut French Rolls with Provolone Cheese directly underneath the broiler. Add the vegetables and crumbled bacon back in with the beef and add 2 full slices of provolone cheese on top of the mixture. Stir the beef, vegetable, bacon and cheese mixture until the cheese has melted (about 2 min). Reduce heat as necessary. Remove the skillet from the heat. Remove the French rolls from the oven once the rolls are lightly toasted and the cheese is slightly melted. Let the French rolls cool for about a minute and then add the Spicy Garlic Mayo Spread to the non-cheese side. Spoon in a ample portion of the cheesesteak mixture and serve.

- Heat oil in a large skillet over medium heat. Saute beef until lightly browned. Stir in green pepper and onion, and season with salt and pepper. Saute until vegetables are tender, and remove from heat.
- Spread each bun generously with garlic mayonnaise. Divide beef mixture into the buns. Top with shredded cheese, and sprinkle with oregano. Place sandwiches on a baking pan.
- Heat sandwiches in preheated oven, until cheese is melted or slightly browned.

SPICY GARLIC MAYONNAISE
This comes from The Cuisine of California cookbook and was given to me by --Sheri-- in the last cookbook swap. This is great to kick up any kind of sandwich. I've also used it on a shrimp and avocado salad. It may be kept up to 5 days in refrigerator.

Steps:
- Immerse pimiento or red pepper in a pan of boiling water and boil 2 minutes. (Skip this step if used the roasted red peppers in a jar).
- Remove from water with a slotted spoon.
- Reserve.
- While motor is running, add garlic cloves to a food processor fitted with the steel blade.
- Process until pureed.
- Add pimiento or red pepper and process until blended.
- Add egg yolks and blend.
- With blades turning, slowly pour in olive oil in a fine steady stream until sauce is thick and smooth and all oil is added.
- Add salt, pepper and cayenne.
- Taste for seasoning.
- Refrigerate in a tightly covered container until ready to use.
- Serve cold.

These sandwiches are delicious. I purchase steak that has been sliced for making stir-fry, which takes a little less time, but achieves the same results.

- Place the beef in a large bowl. In a small bowl, mix together salt, pepper, paprika, chili powder, onion powder, garlic powder, thyme, marjoram and basil. Sprinkle over beef.
- Heat half of the oil in a skillet over medium-high heat. Saute beef to desired doneness, and remove from pan. Heat the remaining oil in the skillet, and saute the onion and green pepper.
- Preheat oven on broiler setting.
- Divide the meat between the bottoms of 4 rolls, layer with onion and green pepper, then top with sliced cheese. Place on cookie sheet, and broil until cheese is melted. Cover with tops of rolls, and serve.

- Slice hoagie rolls 3/4 of the way through with a serrated knife. Dice onions and thinly slice beef.*
- In a small bowl, stir together 2 Tbsp softened butter with 1 pressed garlic clove. Spread garlic butter onto the cut sides of 4 hoagie roll. Toast the buns on a large skillet, flat cooktop or griddle on medium heat until golden brown then set aside.
- Add 1 Tbsp oil to your pan/cooktop and sautee diced onions until caramelized then transfer to a bowl.
- Increase to high heat and add 1 Tbsp oil. Spread the super thinly sliced steak in an even layer. Let brown for a couple of minutes undisturbed then flip and season with 1/2 tsp salt and 1/2 tsp black pepper. Sautee until steak is fully cooked through then stir in the caramelized onions.
