GRAPEFRUIT SPRITZERS

- Make the simple syrup: Bring the sugar and 1/3 cup water to a simmer in a small saucepan, stirring to dissolve the sugar. Remove from the heat and let cool completely, about 20 minutes.
- Combine the white wine, grapefruit juice, Campari and simple syrup in a pitcher and refrigerate until ready to serve. Pour into ice-filled glasses and top with the seltzer. Garnish with raspberries and grapefruit.
SPICY GRAPEFRUIT SPRITZ
The spicy grapefruit base can be made up to 6 hours ahead. Add seltzer just before serving.

- Muddle lime juice, sugar, and jalapeno slices, pressing on chiles and stirring until sugar dissolves. Stir in grapefruit juice. Pour halfway up ice-filled glasses; top with seltzer. Garnish with grapefruit slices.
- To spike it: Add 1 ounce tequila or mezcal per serving, before the seltzer.

LAMBRUSCO SPRITZ
Think of this as a grown-up, but not too grown-up, spritz. Here, grapefruit brightens and plays up the wine's light bitterness, while buttery green olives add a touch of earthy brine and serve as a welcome snack. Reach for a lighter, sweeter, more citrus-leaning amaro, to avoid masking the bubble's nuance. For Lambrusco, seek dry or off-dry bottles, and commit to tasting a few until you find what you like. Two to start with: Lambrusco di Sorbara, which is the lightest in color and flavor, with high acidity and plenty of aromatics, and Lambrusco Grasparossa, which is dark in color and bold in flavor with dry tannins and rich berry notes.

- Starting at the top of the first grapefruit, use a paring knife or vegetable peeler to cut a spiral-shaped piece of peel, rotating grapefruit as you cut and stopping once you reach the middle. (This is your “horse’s neck” garnish.) Turn the grapefruit so that the unpeeled portion is at the top and repeat the process. Repeat with remaining grapefruit; reserve flesh for another use.
- For each cocktail, place a horse’s neck spiral in a rocks glass or large wine glass. Fill with ice and add 4 oz. Prosecco, 1½ oz. grapefruit juice, ½ oz. Aperol, ½ oz. vodka, and a splash of club soda. Gently stir together.
