Steps:

  • Position an oven rack in the lowest position; preheat to 350 degrees F. Trim off any skin from the ham, leaving a 1/4-inch layer of fat. Score the fat with a sharp knife in a 1-inch crosshatch pattern without cutting through to the meat. Place the ham flat-side down in a roasting pan and add the chicken broth to the pan. Cover with foil and bake 1 1/2 hours.
  • Meanwhile, make the glaze: Whisk the honey, brown sugar, mustards, vinegar, hot sauce, thyme and red pepper flakes in a medium bowl. Remove 3/4 cup of the glaze to a separate bowl and set aside for serving. Remove the ham from the oven, discard the foil and brush with about one-quarter of the remaining glaze. Continue baking, brushing with the glaze and the pan juices every 30 minutes, until the ham is a deep reddish-brown and a thermometer inserted into the center registers 140 degrees F, 1 to 1 1/2 more hours. (Add 1/2 cup water to the pan if the juices dry out.)
  • Transfer the ham to a cutting board and let rest 20 minutes before slicing. Serve with the reserved glaze.

1 8-pound fully cooked bone-in half ham (shank or butt)
1 cup low-sodium chicken broth
1 cup honey
3/4 cup packed light brown sugar
1/2 cup dijon mustard
1/2 cup whole-grain mustard
3 tablespoons apple cider vinegar
3 tablespoons hot sauce
1 tablespoon chopped fresh thyme
1/2 teaspoon red pepper flakes
Bring the ham to room temperature 1 hour before baking.

Steps:

  • Heat 3 tablespoons oil in large nonstick skillet over medium-high heat. Add 1 1/2 cups green onions, ham, and bell pepper. Sauté until vegetables begin to soften, about 3 minutes. Add potatoes, thyme, and Cajun seasoning; stir to combine. Reduce heat to medium. Cover and cook 8 minutes. Uncover and continue cooking until potatoes are tender and crusty, occasionally scraping up browned bits, adding more oil by tablespoonfuls if potatoes are sticking, about 7 minutes longer. Mix in remaining 1/2 cup green onions. Season with salt and pepper.

3 tablespoons (or more) olive oil
2 cups chopped green onions
1 1/2 cups diced ham
1 cup chopped bell pepper
3 cups southern-style frozen hash brown potatoes from 32-ounce bag
1 1/2 tablespoons chopped fresh thyme or 2 teaspoons dried
3/4 teaspoon Cajun or Creole seasoning

Steps:

  • For the ham: Preheat the oven to 325 degrees F and adjust the oven rack to the lowest level.
  • Using a sharp paring knife or box cutter, score the entire fat layer of the ham with deep cuts (being careful to not cut into the meat) in a 1/2-inch-wide diamond pattern.
  • Place the ham cut side-down in a roasting pan fitted with a rack and add water to the bottom of the roasting pan about 1/2 inch deep. Cover loosely with foil and bake for 45 minutes.
  • Meanwhile, make the glaze: In a small saucepan over medium heat, stir together the honey, jam, mustard, vinegar, garlic, jalapeno, orange zest and juice and pepper to taste until combined. Bring to a gentle simmer over medium heat. Cook, stirring often, until the glaze is slightly thickened, 3 to 5 minutes. Remove from the heat and set aside.
  • Remove the foil from the ham and spoon the pan drippings over the top; then generously brush the glaze all over. Continue baking the ham, uncovered, and repeat the basting with juices and brushing with glaze every 20 minutes until the glaze is deep golden brown and caramelized or until the internal temperature reaches 130 degrees F, 10 to 12 minutes per pound, about 1 hour more.
  • Loosely cover the ham with foil and let rest 15 minutes before slicing. Serve warm or at room temperature as a main course, or prepare a sandwich bar.
  • For the ham sandwich bar: Arrange all the ingredients on the table or counter. I like to assemble my sandwich like this: Put cheese and then a couple of slices of ham on a bun bottom. On the bun top, dollop mustard and mayo, then top with cornichons and Pickled Red Onions. Close up the sandwich.
  • To a saucepan, add the vinegar, sugar, salt, bay leaf, red pepper flakes to taste and 1/2 cup water and bring to a boil. Put the onions in a heatproof container and pour the boiling pickling liquid over them. Let the onions sit for 30 minutes to let cool. Cover and refrigerate until ready to use.

1 fully cooked bone-in ham, shank end (about 10 pounds), at room temperature 1 to 2 hours
1/2 cup honey
1/4 cup apricot jam
2 tablespoons Dijon mustard
1 tablespoon apple cider vinegar
4 cloves garlic, smashed
2 jalapenos, seeded and diced small
Zest and juice of 1 orange
Freshly ground black pepper
Cheeses (such as Swiss and Cheddar), deli-sliced and cut into triangles
Hawaiian sweet rolls, split
Mustards (such as whole-grain mustard, Dijon, yellow mustard)
Mayonnaise
Sliced cornichons
Pickled Red Onions, recipe follows
3/4 cup red wine vinegar
2 tablespoons sugar
1/2 teaspoon kosher salt
1 bay leaf
Red pepper flakes
1 large red onion, halved and sliced into 1/4-inch-thick half-moons

SPICY HAM SLICE/STEAK

I'm not a big ham fan but I just LOVE this dish. Easy to do, very forgiving - you can substitute different kinds of juice or soda. Ham steaks freeze well and thaw fast so it's good for a week night. Fairly economical if you get the ham on sale. I love to have it with orange rice where I substitute about a half a cup of OJ for water with plain old white or even brown rice, and a nice green salad. Enjoy!

Steps:

  • Prick ham slice with a fork all over to make holes and slash the edges so it won't curl during baking.
  • Place in baking dish just big enough to hold slice.
  • Mix all other ingredients together well and pour over ham.
  • Marinate at least 30 minutes but can be longer (some times I do it in a baggie overnight).
  • Put in 350* oven, bake for about 30 minutes. Mmmm!

  • In a heavy skillet heat 1 ½ tablespoons olive oil over medium-high heat. Add the onion, garlic and jalapeno. Sauté until onions begin to turn translucent (about 2 minutes). Remove from skillet and set aside.
  • Add the additional tablespoon of olive oil to the skillet. Add the potatoes. Stirring occasionally, allow the potatoes to cook until cooked (firm but not crunchy); 5-8 minutes. Do not stir constantly so the potatoes can form a crisp crust.
  • Add the ham to the skillet with the potatoes; stir to combine and heat the ham. Add back the onion, garlic and jalapeno along with the hot paprika. Stir to combine and warm everything evenly.
