Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x12 inch baking dish.
  • Bring chicken broth and salt to a boil in a large saucepan over high heat. Stir in the grits, return to a simmer, then reduce heat to medium-low, and continue cooking for 20 minutes, stirring frequently.
  • Meanwhile, melt the margarine in a skillet over medium heat. Stir in the green onions, green pepper, and garlic; cook until the peppers have softened, about 5 minutes. Stir in the shrimp, and cook until they begin to firm.
  • Stir the Monterey Jack cheese, 3/4 cup Cheddar cheese, shrimp and vegetable mixture, canned tomatoes, and black pepper into the grits; pour into prepared baking dish and sprinkle with remaining 1/4 cup Cheddar cheese.
  • Bake in preheated oven until the cheese is bubbly and beginning to brown, 30 to 45 minutes.

SPICY LOW-COUNTRY SHRIMP & GRITS

Being from the South, grits are a staple for use in so many recipes for breakfast, lunch AND dinner. I've found that I really like Polenta much better that the Dixie Lily white homoney grits I grew up on. Polenta has a rich buttery taste naturally with no need to add the amount of butter needed in homoney grits. This is my little...

Steps:

  • 1. Grits: In a tall pot bring water to a boil with 2-3 good pinches of salt, add Polenta whisking constatly to prevent clumps. Reduce heat to simmer until it begins to thicken. Stirring occasionally, watch as it thickens and add the milk a little at a time to get the desired thickness (I don't use a full cup of milk, but it varies per taste). Salt to taste simmer on low heat 20-30 minutes, as the shrimp are prepared.
  • 2. Shrimp: In a shallow bowl, add cajun seasoning and toss shrimp to cover, then set aside. In a saute pan over medium-high heat, with a portion of oilve oil, add the cooked sausage to heat through about 3-5 minutes. Add butter to melt with garlic, peppers, white wine and seasonings; cook additional 3-5 minutes until incorporated. Finally add the shrimp and cook until pink and slightly curled in shape, about 3 minutes. Salt and pepper to taste.
  • 3. Plate: Spoon grits into shallow serving bowls and top with the shrimp mixture. Garnish with sliced green onions if desired.

3 c water (plus 1 cup milk for grits)
1 c uncooked polenta
1 Tbsp butter for grits
1-2 pinch salt to taste for grits

2-3 small cooked andouille sausage links, sliced
2 small red bell peppers (sub 1 red and 1 yellow)
1 clove minced garlic
1/2 Tbsp cajun seasoning of your choice
1 tsp cayenne pepper
1 tsp red pepper flakes
1 tsp dried thyme
splash of dry white wine (optional)
1-2 pinch salt and pepper to taste
1/4 c olive oil for shrimp saute
1/2 stick butter for shrimp saute

Steps:

  • Heat the oil in a 12-inch skillet over medium-high heat. Add the andouille sausage, shallots, garlic and 1 teaspoon Creole spice mix and cook until the shallots become translucent and the sausage browns, 10 to 12 minutes.
  • Add the chicken stock, coffee, Worcestershire sauce and Tabasco sauce to the skillet and bring to a boil. Add the butter, reduce the heat and simmer until reduced by one-third. Add the shrimp and remaining teaspoon Creole spice mix and simmer until the shrimp are just cooked through, 5 to 6 minutes.
  • Divide the cheesy grits among bowls and top with the shrimp and redeye gravy. Garnish with the green onions.
  • Combine the milk, butter, salt, pepper and 2 1/2 cups water in a 4-quart saucepan over high heat. Just before the mixture comes to a boil, slowly add the grits, stirring constantly to avoid clumps. Turn the heat to low and cook for 15 minutes, stirring occasionally. Stir in the Cheddar until completely melted. Adjust seasoning if necessary. If the grits are a little thick, add more water until the desired consistency is reached. Cover and keep warm.

6 cloves garlic, thinly sliced
2 teaspoons Creole or Cajun spice mix

Steps:

  • Bring water and 2 teaspoons salt to a boil in a heavy saucepan over medium-high heat. Whisk grits into the boiling water, and then whisk in half-and-half. Reduce heat to medium-low and simmer, stirring occasionally, until grits are thickened and tender, 15 to 20 minutes. Set aside and keep warm.
  • Sprinkle shrimp with salt and cayenne pepper to taste. Add lemon juice, toss to combine, and set aside to marinate.
  • Place sausage slices in a large skillet over medium-high heat. Cook, stirring occasionally, until browned, 5 to 8 minutes. Remove sausage from the skillet.
  • Add bacon to the same skillet and increase heat to medium-high. Cook until evenly browned, about 5 minutes per side. Transfer bacon to paper towels to drain, then chop or crumble when cool enough to handle. Leave bacon drippings in the skillet.
  • Add bell peppers, onion, and garlic to the bacon drippings; cook and stir until onion is translucent, about 8 minutes.
  • Stir cooked sausage and marinated shrimp into the skillet with the cooked vegetables. Turn off the heat and set aside.
  • Melt butter in a small saucepan over medium heat. Whisk in flour, stirring to create a smooth roux. Turn heat to low and cook, stirring constantly, until mixture is golden brown in color, 8 to 10 minutes. Watch carefully, mixture burns easily.
  • Pour the roux over the sausage, shrimp, and vegetables. Place the skillet over medium heat, add chicken broth, bacon, and Worcestershire sauce, and stir to combine. Cook until sauce thickens up and shrimp turn opaque and bright pink, about 8 minutes.
  • Just before serving, mix sharp Cheddar cheese into grits until melted and grits are creamy and light yellow. Serve shrimp mixture over cheese grits.

LOW COUNTRY SHRIMP AND GRITS

I made this recipe after reading a number of shrimp & grits recipes, and not finding one that incorporated all the flavors I wanted, made my own. It turned out quite nicely, so I'm sharing. The sauce is light in terms of volume, rather than being like a soup, and has a lot of different flavors packed into it.

Steps:

  • For the grits, bring the water and heavy cream to a boil in a medium pot.
  • Whisk in the grits, salt, and pepper.
  • Reduce the heat to medium, place the butter on top of the grits, and cover. Continue cooking for about thirty minutes, stirring frequently.
  • For the shrimp, heat the oil and garlic in a large sauce pan.
  • Saute the onion, green onion, and tomato with salt and pepper over medium heat until the tomato is softened.
  • Add the shrimp and pour the lemon juice, paprika, and parsley over them. Cook thoroughly.
  • Add the heavy cream and hot sauce and simmer for a few minutes, allowing the cream to absorb the flavors. Serve over the grits.

4 cups water
2 cups heavy cream
2 teaspoons salt
1 teaspoon pepper
2 cups grits (may be quick grits, but definitely not instant)
1/2 cup butter
2 garlic cloves, minced
2 tablespoons olive oil
1 small onion, diced
1 green onion, chopped
1 tomatoes, diced
1/2 teaspoon salt
1/2 teaspoon pepper
1 lemon, juiced
1 lb large shrimp, peeled and deveined, with tails still attached
1/2 teaspoon paprika
1 teaspoon dried parsley
1/2 teaspoon hot sauce (I used Cholula)
1/4 cup heavy cream
