SWEET AND SPICY PEANUT BUTTER-BACON SANDWICHES

I craved peanut butter and bacon toast while pregnant. Then I sampled a friend's peanut butter with chile pepper in it and loved it. The little zip made the sandwich better, and now I live on this peanut butter sandwich recipe. -Carolyn Eskew, Dayton, Ohio

Steps:

  • Spread peanut butter on 2 bread slices; sprinkle with cayenne. Top with bacon and drizzle with honey. Top with remaining bread.

Spicy Peanut Butter Bacon Sliders Recipe - (4.5/5) image

Steps:

  • Preheat a grill to medium-high heat. Mix together the ground beef, soy sauce, sriracha, 2 tablespoons of the peanut butter (you can leave the peanut butter out of the patties if desired) and a pinch of pepper. Divide the beef in 12 balls and flatten each ball into a patty the size of the slider buns. Butter both halves of each bun. When the grill is medium high, place the patties on the grill and cook for 4 minutes. Flip the patties over with a spatula and cook until your desired doneness is reached. During the last 2 minutes of cooking, place a slice of cheese on the top of each patty and close the grill lid. Remove the sliders to a plate and cover with foil. Grab the buttered slider buns and place cut side down on the grill for 1-2 minutes to toast them. Divide the remaining peanut butter among the 12 bottom buns, top each with a burger patty, slice of bacon, jalapenos, crispy fries and red onion. Drizzle with more sriracha, if desired. Cover with the top of the bun and serve immediately!

12 slices pepper jack or cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
  • Place rolls, without separating them, on a flat work surface. Cut in half horizontally. Arrange bottom half in the prepared pan. Sprinkle 1 cup Cheddar cheese on top.
  • Bake in the preheated oven until cheese is melted, 3 to 5 minutes.
  • Cook and stir beef and onion in a skillet until beef is browned, 5 to 8 minutes. Drain grease. Stir in tomatoes, 1 1/2 teaspoons Dijon mustard, 1 1/2 teaspoons Worcestershire sauce, salt, and pepper. Cook until fully combined, 1 to 2 minutes.
  • Spoon beef mixture over rolls. Sprinkle remaining 1 cup Cheddar cheese and bacon on top. Cover with top half of rolls.
  • Combine butter, brown sugar, 1 tablespoon Dijon mustard, and 2 teaspoons Worcestershire sauce in a microwave-safe bowl. Cover and microwave on high until butter is melted, about 1 minute. Stir until blended and pour over rolls. Sprinkle sesame seeds on top.
  • Bake in the preheated oven, uncovered, until golden brown, 20 to 25 minutes.
