- In a medium container with a lid, mix canola oil, tarragon vinegar, sugar, thyme, dry mustard, and garlic. Cover, and shake until well blended. Place artichoke hearts into the mixture, cover, and marinate in the refrigerator 4 hours, or overnight.
- In a large bowl, toss together lettuce, red bell pepper, carrot, red onion, black olives, green olives, cucumber, and Romano cheese. Season with pepper. Pour in the artichoke and marinade mixture, and toss to coat.

- Combine dressing and peppers. Pour over shrimp in shallow dish; stir until shrimp are evenly coated. Refrigerate until ready to use.
- Cook sausage in large skillet on medium heat 10 min. or until done, stirring frequently; drain. Cool slightly.
- Toss salad greens with tomatoes, chickpeas and onions in large bowl. Add shrimp; mix lightly. Top with sausage.

SPICY GRILLED SHRIMP SALAD

- Peel and devein shrimp. Place in bowl with jalapeno, juice of 1/2 a lime and olive oil. Toss to coat and let sit for 15 minutes. In separate bowl combine cilantro, avocado, red pepper, and onion. Add juice of 1 lime, cayenne and salt. Toss to coat. Cook off shrimp on grill or on stove top in a skillet. Add shrimp to salad and toss to coat. Serve on bed of lettuce.

- In a large saucepan, heat 2 tablespoons of the olive oil with the garlic over medium heat. When the garlic starts to sizzle, add the chopped red bell pepper, add the Ragu Pasta sauce. Heat on medium until hot. Lower the heat, and simmer for 30 minutes, stirring occasionally.
- Meanwhile, bring a large pot of lightly salted water to a boil. Cook pasta for 8 to 10 minutes, or until al dente; drain.
- In a large skillet, heat the remaining 2 tablespoons of olive oil over high heat. Add the shrimp (or seafood of your choice). Cook for about 2 minutes, stirring frequently, or until the shrimp turn pink. Add the Italian sausage and cook for 2 minutes. Add shrimp and sausage to the Ragu Pasta sauce, and stir in the chopped arugula. Cook for 3 to 4 minutes, or until the sauce just begins to bubble. Serve sauce over pasta.

- Cook fettuccine according to package directions. Meanwhile, in a large skillet, saute the onion, celery, peppers, green onions and garlic in 2 tablespoons butter until tender. Stir in the cream, wine, Creole seasoning, salt, pepper flakes and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 5-6 minutes or until thickened., In another large skillet, saute sausage and shrimp in remaining butter for 5-6 minutes or until shrimp turn pink. Drain fettuccine; toss with vegetable mixture, tomatoes and sausage mixture.

- Heat 1 Tbsp olive oil in a large skillet over high heat. Add shrimp to skillet and cook shrimp until just opaque in center, stirring often, about 5 minutes. Transfer shrimp to a plate.
