SWEET AND SPICY SMOKED TURKEY WITH SMOKED GRAVY

Steps:
- Rub the Sweet BBQ Rub all over both sides of the turkey. Transfer to a disposable aluminum pan breast-side up and refrigerate overnight, uncovered, to dry brine.
- The day of roasting, let the turkey sit at room temperature for 1 hour. Add the carrots and peppers to the pan and put the turkey on a wire rack above the vegetables.
- Preheat a gas grill, charcoal grill or smoker to 350 degrees F. If using a gas or charcoal grill, set up a smoke box or small disposable aluminum pan with fruit wood chips. Once the smoke is rolling, put the turkey and vegetables on the grill in the pan, close the lid and smoke for 1 hour.
- After 1 hour, rotate the turkey and add the stock to the pan to deglaze. Continue smoking until the breast meat registers 160 degrees F and the thighs hit 165 degrees F, another 1 to 1 1/2 hours.
- Let the turkey rest 45 minutes to an hour while you make the gravy. Remove the carrots and peppers from the pan and set aside. Strain the drippings from the pan using a fat separator.
- To make the gravy, melt the butter in a small pot over medium heat. Add the flour and whisk well to make a roux. Slowly add the strained drippings and whisk. Let simmer to reduce to the desired consistency. Taste and adjust the seasoning if necessary.
- Slice the turkey and serve over a medley of the smoked carrots and peppers with the gravy on the side.
- Combine the turbinado sugar, granulated sugar, salt, chili powder, paprika, granulated garlic, onion powder, cayenne, cumin and pepper in a bowl. Store in an airtight container.
SPICY TURKEY TACOS
Great way to use all that leftover turkey! Serve tacos with lettuce, shredded cheese, and sour cream.

- Heat taco shells according to package directions., Meanwhile, in a large nonstick skillet, cook turkey and onion over medium heat until meat is no longer pink. Stir in salsa and spices; heat through. Serve immediately, or cool before placing in a freezer container. , To serve, fill each taco shell with 1/3 cup turkey mixture. Serve with lettuce, cheese, sour cream and, if desired, optional ingredients., Freeze option: Freeze cooled meat mixture in freezer containers for up to 3 months. SMOKED TURKEY TACOS
I know most people would do hot turkey sammies , soup or pot pie's etc. But oh no me :-) This is what I came up with for some of the leftover turkey. This was a huge success I think mainly due to the amazingly delicious saucy relish! And that smoked turkey put it over the moon.

- 1. Put the spinach into a pan and sauté them in a small amount of butter. Don't let the amount of spinach worry you....it looks like a ton, but like most greens it will have wilted down.
- 2. Shred the turkey and once the spinach as wilted add it to the pan, season with salt and pepper, when the turkey is hot and the spinach is wilted cover to keep warm.
- 3. TO MAKE THE CRANBERRY SAUCY RELISH:
- 4. Mix the cranberry sauce, red onion, jalapeño pepper and the bourbon, mix thoroughly.
- 5. Cover and refrigerate for 1 hour.
- 6. THE GARNISHES:
- 7. Finely chop the green onions. Grate both of the cheeses and combine.
- 8. TO ASSEMBLE:
- 9. Spread some of the cranberry mixture on the bottom of the shells.
- 10. Then add the hot turkey, spinach mixture.
- 11. Then the cheese!
- 12. Top with the green onions and enjoy!

- Put the diced yam in a microwave-safe bowl; cook in the microwave until cooked through and fork-tender, stirring once, 5 to 7 minutes.

- Put the oil, onions, garlic, jalapeno, and spices in a medium skillet, season with salt and cook over medium to medium-low heat, stirring occasionally until tender, about 10 minutes. Increase the heat to medium-high, add the tomatoes and boil to thicken, about 2 minutes. Stir in the turkey and chicken broth, adjust the heat so the mixture simmers and cook until the turkey is cooked through and the mixture thickens but is not dry, about 12 minutes. Stir in cilantro and season with salt and pepper, to taste. Transfer to a serving bowl and cover.
- To make the taco shells: Pour enough frying oil into a small skillet so it's about 3/4 of an inch deep; heat over medium to medium-high. Holding 1 edge of a tortilla with tongs, lay the other half in the oil, keeping it flat with a spatula. Cook until crisp, about 30 seconds to 1 minute. Flip the tortilla over and repeat with the other half, holding the first side of the tortilla at an angle to make an open shell, cook for about 1 minute more. Transfer to a paper towel-lined plate to drain.
- Put the fixings and meat in individual bowls and the taco shells on a platter. Serve, encouraging your diners to build their own tacos, with meat in the shell and the fixings on top.
SMOKED TURKEY
This is an easy to make recipe. I've tried numerous others using colas, fancy pans, etc., but none come out near as good as this. Keeping it simple is the best way. Be sure to use a high-quality charcoal, so that it will burn for a long time. Turkey will be moist tender and smoky!

- Place the charcoal into the bottom pan of the smoker. Light the coals and wait for the temperature of the smoker to come to 240 degrees F (115 degrees C). Lightly oil grate.
- Rinse turkey under cold water, and pat dry. Place hickory chips into a pan with water to cover.
- Place turkey onto the prepared grate. Add 2 handfuls damp chips at start of cooking, then a handful every couple of hours during the cooking process. Leave the lid on - DO NOT keep looking at the turkey, or you will let the heat out! Continue smoking until the internal temperature of the turkey reaches 165 degrees F (74 degrees C), or keep going until the coals die out.
