SPICY AND TANGY HOT WINGS
This is my wing recipe that I've tweaked over the last 10 years to suit my specific tastes. If you don't like vinegar and cayenne; these wings will not be for you. I've never seen a middle ground with this recipe; they are either raved about or politely passed up. If you like a hotter wing experience, double the amounts of chili powder and cayenne powder. Enjoy with chunky blue cheese or ranch dressing.

Steps:
- In a large bowl, mix together the red wine vinegar, malt vinegar, salad dressing, hot pepper sauce, 1 tablespoon chili powder, cayenne pepper, black pepper, garlic, oregano and horseradish.
- Heat the oil in a deep-fryer to 365 degrees F (185 degrees C). In a separate bowl, mix together the flour and 3 tablespoons of chili powder. Dredge the wings in the seasoned flour.
- Deep fry the wings for about 15 minutes, or until dark brown but not burnt. Drain briefly, then throw them into the bowl with the sauce. Stir to coat liberally. If you enjoy a hotter rather than tangy wing, liberally dash more hot pepper sauce onto the already sauce-coated wings.

COCKTAIL WIENERS I
Tasty little smoked cocktail wieners get simmered in a tangy cranberry and chile sauce.

Steps:
- In a 4-quart saucepan over medium heat, combine cranberry sauce and chili sauce. Break the cranberry sauce into smaller pieces with wooden spoon to speed up the melting process. Stir and heat until the cranberry sauce is melted. Add the cocktail wieners and cook until the wieners are heated. Use toothpicks for serving.

CLASSIC COCKTAIL WIENERS
Super easy to make, our Classic Cocktail Wieners are ready in just 30 minutes. We've substituted raspberry jam for grape jelly and added a little more punch with chopped chipotle chiles in adobo sauce. There's no need to have a big meal planned next; this cocktail wiener recipe is so simple you can enjoy the classic appetizer as a main course too.

- In large saucepan, stir together all ingredients. Heat to boiling over medium heat; reduce heat to low. Simmer uncovered 20 to 25 minutes or until thoroughly heated and wieners are plump.
- Remove wieners from sauce to serving platter; pour sauce into small bowl. Serve with toothpicks or bamboo knotted party picks.

- Preheat the oven to 375°F and set two oven racks in the centermost positions. Line two baking sheets with parchment paper.
- Using a paring knife, make a few small cuts into the casing of each cocktail sausage to prevent them from splitting in the oven.
- Dust a clean work surface with flour and place one of the sheets of puff pastry on top. Sprinkle the pastry with flour as well. Using a rolling pin, roll the dough into a 12-inch square, flattening the seams with the rolling pin as you go. Using a pizza cutter or sharp knife, trim the edges so that they are straight. Cut the pastry into a grid, with strips about 1-1/4 inches wide and 2-1/4 inches long. You’ll be making about 8 vertical cuts and 4 horizontal cuts in the pastry (see the picture above for a visual reference; you'll need at least 40 strips and you may have extra).
