SPICY THAI CHICKEN AND VEGETABLES

This is a Spicy Dish! Lots of flavor!You can adjust the heat! Feel free to add more or less chili peppers (Thai Peppers).

Spicy Thai Chicken and Vegetables image

Steps:

  • In a sauce pot simmer first 10 ingredients for 5 minutes.
  • In a frying pan heat 1 tablespoon oil and quickly saute ginger, garlic, onion,& red peppers till crisp, add to coconut milk mixture.
  • Add 1 tablespoon oil and brown chicken slices, 2 minutes, add to coconut mixture.
  • Add the amount chili peppers to pot according to how hot you like your food!
  • Simmer for 5 more minutes.
  • Serve with cooked jasmin rice.
  • Topped with toasted pine nuts.

1 tablespoon curry
1 (14 ounce) can coconut milk, unsweetened
1/2 cup chicken broth
2 kaffir lime leaves, thinly sliced
5 leaves fresh basil, ripped in half
1 tablespoon fresh cilantro
1 stalk of the bottom softer part lemongrass, rough outer leaves removed crushed and very thinly sliced
3 tablespoons fish sauce
2 tablespoons brown sugar
2 tablespoons peanut oil (separated in half)
1 slice gingerroot, sliced finely
1 onion, sliced
2 cloves garlic, minced
1 red pepper, sliced
1 medium zucchini, sliced in circles
2 chicken breasts, sliced
1 -2 hot chili pepper, sliced very fine deviened and seeded
1/4 cup toasted pine nuts

SPICY THAI NOODLES

My husband asked me to recreate a spicy Thai noodle dish he had while traveling (that I had never tasted before)...after a little trial and error I came up with this and we love it! You can use just about any protein you like and if you want it really spicy just add more thai chilis or red pepper. If you can't find thai basil you can use other basil varieties like spicy globe or cinnamon or just leave it out, but it does add a nice flavor.

Steps:

  • Bring a medium pot of water to a boil. Remove from heat and add rice noodles. Soak for 10 minutes. Stir a couple times to keep from sticking. After 10 minutes, drain and rinse with cold water.
  • In a large non-stick pan, heat oil and thai chilis over medium to medium-high heat. (If using ground turkey, chicken, or pork, add to pan and brown with oil and chilis before adding vegetables.).
  • Add vegetables, shrimp, and garlic and cook for 2 minutes.
  • Add softened noodles, fish sauce, soy sauce, and sugar and cook until noodles are tender and warmed through (about 1-2 minutes more). Add a tablespoon (or more) of water if it looks like you need more sauce.
  • Stir in basil leaves and serve immediately.

Spicy Thai Pork with Vegetables & Sesame Noodles image

Steps:

  • Preheat oven to 400°F. Place Reynolds® Oven Bag in 13x9x2-inch pan. Add flour, peanut sauce and water to bag. Gently squeeze bag to blend ingredients; set aside.
  • Slice pork tenderloin 1-inch thick; sprinkle with salt and pepper. Add to oven bag. Turn bag several times to coat pork with sauce. Arrange pork in even layer in oven bag. Top with snap peas and bell pepper.
  • Close oven bag with nylon tie. Cut six 1/2-inch slits in top. Tuck ends of bag in pan.
  • Bake 12 to 14 minutes or until pork reads 145°F on meat thermometer. While pork is baking, break up noodles and COOK according to package directions. Drain cooked noodles and place in medium bowl with 1 seasoning packet, sesame oil and green onions; stir to mix well. Carefully cut bag open.
  • Place 1/4 of noodles on each plate and top with pork, vegetables, and sauce. Sprinkle with peanuts and green onions. Drizzle with additional peanut sauce, if desired.

Spicy Thai Noodles with Vegetables image

Steps:

  • Cook noodles in boiling water until tender; drain.
  • Mix ingredients for sauce in a bowl with a whisk until smooth; set aside.
  • Heat 2 tablespoons cooking oil in a wok or large skillet over high heat (add more oil as necessary during cooking).
  • Add lemongrass and Thai chiles and cook until fragrant.
  • Add carrot, scallions, and bell peppers and cook until carrot starts to become crisp-tender.
  • Add bean sprouts and cook 1-2 minutes more.
  • Add drained noodles to the pan and pour sauce over noodles.
  • Using two utensils, lift vegetables from bottom to integrate throughout noodles and mix well.
  • Garnish with chopped cilantro and chopped peanuts and serve with hot chili sauce (sriracha), if desired.
  • Cooking tip: you may cut noodles into smaller pieces after cooking with kitchen shears to make them easier to work with.
