Spinatstrudel (Spinach Strudel) image

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
  • Mix spinach, Parmesan cheese, cottage cheese, sour cream, shallots, 1 egg, garlic, salt, black pepper, and nutmeg together in a bowl until filling is well-mixed.
  • Roll puff pastry onto a clean work surface, a little thinner at the edges. Transfer to the prepared baking sheet.
  • Spoon the filling down the middle length of the pastry sheet. Crack 1 egg into a cup but do not beat it. Brush the edges of the puff pastry with egg white and close the pastry around the filling. Close the ends of the roll and carefully turn it over so the seam is on the bottom.
  • Beat what remains of the egg; brush over the top of puff pastry and cut a few slits in the pastry.
  • Bake in the preheated oven until the strudel is golden brown, about 30 minutes.

Spanakopita - Greek Spinach-Feta Strudel image

Steps:

  • Heat oil in a large frying pan (or skillet) and add chopped onion and minced garlic (adjust amount to your taste).
  • Let fry until translucent.
  • Add chopped spinach and let wilt.
  • Season with nutmeg, vegetable broth granules, salt and pepper.
  • Add ricotta cheese and stir to dissolve.
  • Crumble walnuts to mixture.
  • Add feta cubes and stir again.
  • Let spinach filling cool for a couple of minutes.
  • Meanwhile heat oven to 175°C and cover a baking tray with baking paper.
  • Place puff pastry on baking tray and brush sides with melted butter.
  • Pour cooled spinach mixture on pastry and cover two thirds of the pastry with mixture, leave half inch wide edges on the sides and bottom.
  • Fold in bottom and sides and roll pastry to a strudel, seam side down.
  • Brush with the rest of the melted butter.
  • Bake for about 25minutes at 175°C until golden brown. After 15 minutes sprinkle strudel with sesame seeds.

Steps:

  • For the dough
  • Mix the flour with the egg yolks, working the mixture with a fork until blended, add the warm milk with melted butter, work until a smooth elastic dough forms, knead 8-10 minutes with the mixer or 20 minutes by hand. Wrap in plastic wrap and refrigerate for at least an hour, it can be overnight.
  • Preheat oven to 400°F.
  • For the filling
  • In a medium skillet over medium heat, heat the oil and brown the onion for 5 minutes. Add the green onions or scallions and cook 2 minutes more. Remove from heat. In a large bowl mix the onion and chives together with the well-drained spinach. Add the Parmesan cheese, breadcrumbs, nutmeg and pepper. Beat eggs until blended (30 seconds) and add to spinach mixture, stir well and add the feta cheese. Mix.
  • On floured counter, roll the dough until very thin, you should be able to see through and be 15 "x 21". Move the dough on top of a tea towel and let stand 5 minutes to dry a little, brush with the vegetable oil. Spread the filling. Leaving 1" along the long side (21"). Roll up starting from the opposite long side, you want the strudel to be longer than fatter. Carefully place on an oiled baking sheet, give it a U shape, and brush with beaten egg.
  • Bake 40-45 minutes until golden and crisp. Allow to cool in the baking sheet on wire rack and cut it warm. You can serve it cold or warm.

Steps:

  • In a skillet melt butter and cook onion for about 3 minutes or until softened. Remove skillet from heat and stir in spinach, feta cheese and egg. Season with salt and pepper. Preheat oven to 375 degrees. Lay out one layer of phyllo dough and brush with butter. Top with another layer of dough and repeat with butter and a third layer of dough. With a sharp knife cut rectangle into 3 evenly sized pieces. Place a heaping tablespoon of the spinach mixture in lower left corner of one of the pieces and fold up as you would a flag--folding the lower corner up to form a triangle and continuing to fold up in the shape of a triangle. Place triangles on a baking sheet, at this point they can be frozen and then stored in an airtight container. Bake for 15 minutes or until golden brown and puffed.

Steps:

  • Preheat the oven to 425 degrees F. Line two baking sheets with parchment paper.
  • Set the frozen spinach out on a plate at room temperature to soften slightly.
  • Melt the butter in a large pot over medium heat. Add the onion and a pinch of salt. Cook, stirring often, until the onion is soft and translucent, 5 to 7 minutes. Add the garlic and a few turns of black pepper and cook until fragrant, 1 more minute. Add the flour and stir to combine, then stir in the spinach and a good pinch of salt. Cook, stirring, until the spinach is heated through and the mixture is combined. Stir in the feta, heavy cream, lemon juice and hot sauce, then remove it from the heat. Taste and adjust seasonings as desired.
  • Roll out half of the pie dough on a lightly floured surface until it is a large round, about 1/4 inch thick. (If using store-bought pre-rolled dough, simply unroll it onto your surface.) Spread on half the spinach mixture in an even layer so that it covers the dough. Using a pizza cutter or knife, cut the dough like a pizza into 8 triangular wedges. Roll up each section starting at the wide end. Transfer the rugelach to the lined baking sheets, placing them 1 inch apart. Repeat with the other half of the dough and spinach filling.
  • Lightly brush the tops with egg wash and sprinkle with sea salt.
  • Bake until golden brown, about 20 minutes. Let cool slightly and enjoy. Store leftovers in the fridge and reheat in a toaster oven.

Steps:

  • Heat oven to 350 degrees. Make the filling: In a large bowl, combine spinach, parsley, dill, scallions, oregano and eggs and stir to incorporate. Season with salt and pepper, then add Maras pepper, feta and Manchego, and stir well.
  • Brush a 10-inch pie plate or skillet with lightly with olive oil. (You can also use a 9-by-13-inch pan for a rectangular pie.) Line with 1 sheet of phyllo, letting the excess fall over the sides of the pan. Brush phyllo lightly with olive oil, then follow with 2 more sheets, brushing each with oil.
  • Pour the filling into the phyllo-lined pan, spreading it to the edges with the back of a spoon. Top with 3 more sheets of phyllo, brushing each sheet with olive oil before adding the next.
  • Fold the ends of the phyllo back over the top and toward the center of the borek, and brush with oil. With the palm of your hand, press down on top layer to make the pie compact. (Alternatively, roll the excess toward the center to form a rim.)
  • Bake for 30 minutes, until golden. Let rest for a few minutes before cutting into wedges. The borek is also good served at room temperature.

SPINACH AND FETA COOKED LIKE SAAG PANEER

Here's a familiar Indian takeout staple--saag paneer--but with the ingenious substitution of large cubes of feta for paneer (a bit of inspiration from our 1998 family trip to Athens and near continuous consumption of Greek salads, which in Greece are just . . . salads). The first time I tasted it, it was like when I discovered you can do the 9 times table with your fingers in third grade, which is to say, I just about lost it. Not only is my mom's spinach gravy infinitely more complex than that of most versions of saag paneer (I have been known to steal sauce swipes out of the pan when my mom isn't looking), but I also love the way the feta gets all soft and pseudo-baked, soaking in all the spices and melting a little into the gravy. And then you hit the pan with the oiled-up cumin and red chile powder, which add a whole other level of richness. I would go as far as to say that I now want all future saag paneer I eat to be made with feta. And I bet you will, too.

Spinach and Feta Cooked Like Saag Paneer image

Steps:

  • In a large pan over medium heat, warm 1/4 cup of the ghee (or oil). Once the ghee has melted (or the oil begins to shimmer), add the coriander and cardamom and cook, stirring, for about 2 minutes, until the seeds start to brown. Add the onion and cook until it is translucent, 5 to 6 minutes. Stir in the ginger and garlic and cook for 1 minute more. Add the spinach and cook until it is just wilted, 4 to 5 minutes.
  • Remove the pan from the heat and add the lime juice, green chile, and salt. Let cool for 5 minutes. Transfer to a blender and blend into a chunky paste. Return the spinach mixture to the same pan and set it over low heat. Stir in 1/2 cup water, then gently fold in the feta, being careful not to break up the cubes. Cook for 5 to 7 minutes more to soften the feta slightly and allow it to soak up some of the spinach sauce.
  • While the feta cooks, in a small pan or butter warmer over medium-high heat, warm the remaining 2 tablespoons ghee (or oil) for 1 minute. Add the cumin seeds. As soon as (emphasis on as soon as--you don't want your cumin to burn!) the cumin seeds start to sputter and brown, about 1 minute max, remove the pan from the heat. Immediately add the asafetida (if using) and red chile powder.
  • Pour all of the ghee (or oil) mixture into the spinach and feta once that is done cooking. Serve with rice or roti.
