BRANDIED CHERRIES

This rich and fruity sauce is a perfect holiday gift idea, and goes well served over ice cream or used in cocktails.

Brandied Cherries image

Steps:

  • In 2-quart saucepan, mix sugar, water and lemon juice. Heat to boiling. Reduce heat to low; simmer 8 to 10 minutes or until mixture slightly reduces and thickens. Remove from heat. Stir in brandy and pitted cherries.
  • Transfer cherries and liquid to jar (liquid should cover cherries completely). Cover with lid; seal tightly. Cool completely, about 3 hours.
  • Store in refrigerator 4 to 6 weeks before serving.

Steps:

  • Prepare canner, jars and lids.
  • In a saucepan over medium-high heat, combine sugar and water. Bring to a boil, stirring to dissolve sugar. Add Cherries, stirring constantly, and return to a boil. Reduce heat and boil gently for 5 minutes.
  • Using a slotted spoon pack fruit in hot jars withing 1/2 in headspace add rum or spirit. Ladle hot syrup into jar to cover fruit. Wipe rum and place lids and bands on jars.
  • Place jars in canner and process 10 minutes.

1 1/2 teaspoons cherry brandy or 1 1/2 teaspoons amaretto liqueur

PRICKLY PEAR MARMALADE

Prickly Pear Marmalade image

Steps:

  • Do NOT peel your oranges or lemons. (small chop on oranges).
  • Do wash them well to remove any wax and pesticides.
  • In a large stainless steel saucepan combine the oranges, lemons and water.
  • Bring to a boil, reduce heat to medium high and gently boil for 5 minutes.
  • Remove from heat, cover and place in a cool spot for 12 to 18 hours.
  • When ready prepare canner, jars and lids.
  • Bring orange mixture to a boil over medium heat.
  • Boil, stirring frequently until peel is tender, 15 to 20 minutes.
  • Stir in prickly pears, return to a gentle boil.
  • Maintaining boil gradually stir in the sugar.
  • Boil hard, stirring often until mixture reaches gel stage, around 30 minutes.
  • Remove from heat and test gel.
  • If gel stage has been reached skim off foam and ladle into hot jars, leaving 1/4 inch head space.
  • Remove air bubbles, wipe rim, center lid and screw band down to fingertip tight.
  • Place in canner-repeat with remaining jars.
  • Process in a boiling water bath canner for 15 minutes.
  • Turn off heat, remove canner lid and let jars stand in canner an additional 5 minutes.
  • Remove jars, cool and store.

Steps:

  • In a small saucepan, combine sugar and spices with a cup of water. Bring to a simmer, stirring until sugar dissolves. Let simmer for 5 minutes.
  • Turn off heat and add cherries and brandy to pot. Let cool, then store mixture in a jar in refrigerator for at least 2 days before eating, and up to several months. These are great over ice cream.
