SPOOKY GHOST CUPCAKES

So easy, but so fun to make these eyeball-covered cupcakes that are sure to bring a smile! Get all you need to create these cupcakes in the baking aisle.

Spooky Ghost Cupcakes image

Steps:

  • Heat oven to 375°F (350°F for dark or nonstick pans). Place paper baking cup in each of 24 regular-size muffin cups. Make and bake cake mix as directed on box for 24 cupcakes. Cool completely, about 30 minutes.
  • Frost cupcakes a few at a time using 1 container frosting. Immediately sprinkle cupcakes with decors.
  • Place contents of second container of frosting in quart-size resealable plastic freezer bag. Cut small tip from corner of bag. Squeeze frosting onto cupcakes in mound shapes of various sizes.
  • Decorate as desired using candy eyeballs on frosting mounds.

  • Fill a balloon 1/3 to 1/4 full of air. Pinch the balloon at both ends (the blown up/bulbous end and the open end) and tie the two together. This will help the balloon achieve a more round, bubble-like shape. Repeat process with remaining balloons. Balloons tend to attract fibers and particles (hello static electricity!) so place them on a dust-free surface.
  • Preheat oven to 350F. Line one cupcake pan with 12 paper liners, and a second cupcake pan with 3 liners.
  • In a stand mixer fitted with the whisk attachment, mix together the butter and confectioners’ sugar. Begin mixing on low speed until crumbly, and then increase to high and beat for 3 minutes. Add the bubblegum flavor to taste and beat until light and fluffy.

  • Fill a bowl with ice water. Add the gelatin sheets one at a time, making sure that they are separated and not in a big clump, and submerge them in the cold water. Let them sit and soften for 10 minutes.
  • Once they are soft, remove the sheets from the water and gently squeeze out all the excess water back into the bowl. Place the wrung-out gelatin sheets and 3 tbsp of water from the bowl into a small saucepan.
  • Heat the gelatin over LOW heat, swirling the pan occasionally, until the gelatin is melted. You are not trying to get it hot, so watch it carefully and remove the pan once the gelatin is mostly melted! If it is warm, let it cool until it is no longer warm to the touch, but is still fluid. If it starts to set at any time during this process, return it to low heat briefly just until it becomes liquid again.
  • Blow up 8 water balloons to your desired size. Securely tape them to long wooden skewers. Spray nonstick cooking spray on your hands, and rub your hands together until most of the oil is absorbed. Gently rub your hands on the balloons, transferring just a little oil to them—they should not be shiny or greasy at all, or the gelatin won't stick. You should be able to do several balloons before spraying your hands again.
