SPRING VEGETABLE SOUP

It's so good on a chilly spring night and even better with a grilled sandwich for lunch the next day. By the way, you can omit any veggies you chose, but don't use canned vegetables. I promise you it's just better this way.

Steps:

  • Place chicken, leek, celery, carrot thirds (not sliced carrots), parsley sprigs, bay leaf, saffron, peppercorns, and 1 tablespoon salt in a large pot. Add enough water to cover completely (about 14 cups). Bring to a boil, then skim foam from surface; reduce heat to low and gently simmer until chicken is cooked through, 25 minutes.
  • Remove chicken; continue simmering broth while you discard skin and remove meat from bones. Cover meat and refrigerate; return bones to pot and simmer 2 1/2 to 3 hours more.
  • Strain broth through a fine-mesh sieve into a clean pot; discard solids, including bones. (You should have about 7 cups broth.) Skim fat. Add sliced carrots and celery to pot and bring to a boil; reduce heat and simmer until vegetables are very tender, about 25 minutes.
  • Meanwhile, cook egg noodles in a pot of salted boiling water according to package directions; drain. Shred or cut some of reserved chicken to yield 3 cups of bite-size pieces (save extra for salads or sandwiches) and add to broth with noodles; season to taste. Simmer until heated through, about 2 minutes; serve with parsley leaves.

1 whole chicken (about 4 pounds), cut into 8 pieces (with backbone)
2 leeks, cut into thirds, well washed
3 celery stalks, 2 cut into thirds, 1 thinly sliced (1/2 cup)
4 carrots, 2 cut into thirds, 2 peeled and thinly sliced (1 1/4 cups)
4 flat-leaf parsley sprigs, plus small whole leaves for serving
1 dried bay leaf
2 pinches saffron, crushed (1/4 teaspoon)
1/2 teaspoon black peppercorns
Kosher salt and freshly ground pepper
4 ounces egg noodles

Steps:

  • Heat the olive oil in a large stockpot, add the onions, and saute over low heat for 10 minutes, or until the onions are translucent. Add the leeks, potatoes, carrots, salt, and pepper and saute over medium heat for another 5 minutes. Add the chicken stock and saffron, bring to a boil, then simmer uncovered for 30 minutes, or until all the vegetables are tender. Add the haricots verts and spaghetti, bring to a simmer, and cook for 15 more minutes.
  • To serve, whisk 1/4 cup of the pistou into the hot soup, then season to taste. Depending on the saltiness of your chicken stock, you may need to add up to another tablespoon of salt. Serve with grated Parmesan cheese and more pistou.
  • Pistou:
  • 4 large garlic cloves
  • 1/4 cup tomato paste
  • 24 large basil leaves
  • 1/2 cup freshly grated Parmesan
  • 1/2 cup good olive oil
  • Place the garlic, tomato paste, basil, and Parmesan in the bowl of a food processor and puree. With the motor running, slowly pour the olive oil down the feed tube to make a paste. Pack into a container, pour a film of olive oil on top, and close the lid.
  • Yield: 1 cup

2 tablespoons good olive oil
2 cups chopped onions (2 onions)
2 cups chopped leeks, white and light green parts (2 to 4 leeks)
3 cups 1/2-inch-diced unpeeled boiling potatoes (1 pound)
3 cups 1/2-inch-diced carrots (1 pound)
1 1/2 tablespoons kosher salt
1 teaspoon freshly ground black pepper
3 quarts homemade chicken stock or canned broth
1 teaspoon saffron threads
1/2 pound haricots verts, ends removed and cut in 1/2
4 ounces spaghetti, broken in pieces
1 cup Pistou, recipe follows
Freshly grated Parmesan, for serving

SAFFRON RISOTTO WITH SPRING ONION, SAFFRON AND GREEN GARLIC

This is inspired by - but much lighter than - risotto Milanese, the mother of all risottos. If you've never made a risotto, start with this utterly simple classic. Green garlic resembles spring onions or leeks. The young bulbs have not yet set cloves. The flavor isn't at all sharp, but more like the flavor of leeks. Prepare as you would leeks.

Steps:

  • Put the stock or broth into a saucepan, and bring it to a simmer over low heat with a ladle nearby. Make sure that the broth is well seasoned.
  • Heat the olive oil over medium heat in a wide, heavy nonstick skillet or saucepan. Add the spring onion, green garlic and 1/2 teaspoon salt, and cook gently until it is just tender, about three minutes. Do not brown.
  • Add the rice, and stir just until the grains separate and begin to crackle. Rub the saffron between your thumb and fingers, and stir into the rice. Add the wine, stirring until it has been absorbed. Begin adding the simmering stock, a couple of ladlefuls (about 1/2 cup) at a time. The stock should just cover the rice and should be bubbling, not too slowly nor too quickly. Cook, stirring often, until the stock is just about absorbed. Add another ladleful or two of the stock. Continue to cook in this fashion, adding more stock when the rice is almost dry and stirring. When the rice is just tender all the way through but still chewy, in 20 to 25 minutes, it is done. Taste, and adjust seasoning.
  • Add another ladleful of stock to the rice. Stir in the Parmesan, and remove from the heat. The mixture should be creamy. Serve right away in wide soup bowls or on plates, spreading the risotto in a thin layer rather than lumping into a mound.

  • Spring Vegetable Soup. This soup is vegan, and its main ingredients are cannellini beans, leeks, basil, asparagus, and spring vegetables, making it light, healthy, and delicious.
  • Ginger Turmeric Carrot Soup. Whenever I feel like I need to detox, I make a big pot of this ginger turmeric soup. It’s so great for flushing out toxins, and it always gives me a nice reset.
  • Spring Asparagus Soup. Most asparagus soups are pureed, but this one has more of a broth base, with chunks of asparagus swimming in it. It also has onions, potatoes, and carrots, making it ideal for a nice, hearty lunch or a dinner that’s on the lighter side.
  • Roasted Garlic Soup with Parmesan. How can you go wrong with the stunning combination that is garlic and parmesan cheese? Even though roasting garlic takes a little extra time, it’ll be worth it when you have your first taste of this velvety soup.
  • Tomato Soup. There’s something about tomato soup that reminds me of being a kid. My mom would always serve it paired with a tasty grilled cheese sandwich, and I always dipped the sandwich right into the soup.
  • Split Pea Soup. Split pea soup is another favorite of mine from my childhood. However, I’ve been trying to eat more plant-based when I can and split pea usually contains ham or bacon.
  • Taco Soup. This recipe is credited to the queen of southern cooking herself, Paula Deen, so you know it’s over-the-top good! It’s basically everything you love about tacos in a one-pot dish, which is pretty tough to beat.
  • Spring Ramp, Radish & Spinach Soup. This soup is healthy, light, and has such an earthy flavor. If you’re wondering what ramps are, they’re basically just wild leeks.
  • Spinach Soup. If you’re someone who isn’t a huge fan of spinach, this recipe will totally change your mind about it! This pureed soup is rich, smooth, and has such a delicious flavor, thanks to the addition of potatoes and garlic.
  • Artichoke Soup. Before I tried this soup, I’d only had artichokes as an addition to a salad or as a pizza topping. But let me just tell you — artichokes make the most fabulous pureed soup!
