BUTTERNUT SQUASH SANDWICH WITH CHEDDAR CHEESE AND PICKLED RED ONION

Inspired by a sandwich from Brooklyn's Court Street Grocers, this roasted squash number is like autumn squished between bread. The combo of hearty, thyme-roasted butternut squash, rich white cheddar cheese, tangy pickled red onions, and zesty Djionnaise creates a filling vegetarian sandwich, great for lunch or dinner.

Butternut Squash Sandwich with Cheddar Cheese and Pickled Red Onion image

Steps:

  • Arrange racks in middle and upper thirds of oven; preheat to 450°F. Cut squash in half crosswise where the neck and body meet. Peel and seed. Slice neck lengthwise into 1/4"-thick planks (about 2 1/2" long). Slice body into 1/4" pieces.
  • Divide squash, oil, thyme, garlic, 1 tsp. salt, and 1/2 tsp. pepper between 2 rimmed baking sheets. Toss to combine, then arrange in a single layer. Bake, tossing once halfway through and rotating trays, until squash is tender, 18-20 minutes.
  • Meanwhile, bring vinegar, sugar, remaining 3/4 tsp. salt, and 1/2 cup water to a boil in a small saucepan. Remove from heat, then stir in onion. Let cool.
  • Whisk mayonnaise and mustard in a small bowl. Remove thyme leaves from stems, then finely chop leaves and garlic. Stir into mayonnaise mixture.
  • Slice rolls in half and toast in oven 5 minutes. Spread 2 Tbsp. mayonnaise mixture on bottom halves. Top each with squash, cheese, 1 1/2 Tbsp. pickled red onion, and arugula. Serve with chips alongside, if using.
  • Do Ahead
  • Squash can be roasted 3 days ahead; cover and chill. Onions can be made 1 month ahead; cover and chill.

1/4 cup extra-virgin olive oil
8 sprigs thyme
2 garlic cloves, smashed
1 3/4 teaspoons kosher salt, divided
1/2 teaspoon freshly ground black pepper
1/4 cup red wine vinegar
1 1/2 teaspoons sugar
1/2 medium red onion, thinly sliced
1/4 cup mayonnaise
2 tablespoons Dijon mustard
4 ciabatta rolls
4 slices white cheddar
1 cup arugula
Chips (for serving; optional)

Steps:

  • Slice zucchini into 1/4-inch rounds. Let stand until moisture forms on sides. Salt and pepper both sides. Dip in flour, then egg/milk mixture, then in flour again. In a deep frying pan or pot, heat about 2 inches of oil over medium heat. Fry squash until lightly browned on both sides. Drain well on paper towels. Spread toast with mayonnaise and make sandwiches with squash, onions and ham.

2 medium zucchini squash
Salt and freshly ground black pepper

1 egg beaten with 1 cup milk
Olive Oil
12 slices whole-wheat bread, toasted
Mayonnaise
1 large onion, thinly sliced
6 slices ham, fried

GRILLED FETA AND ROASTED SQUASH SANDWICH

I had a hunk of butternut squash lingering in my refrigerator, and it turned out to be the perfect ingredient for a grilled cheese and vegetable sandwich. I roasted it to bring out its sweetness, and paired it with chopped fresh sage, my favorite herb to use with winter squash. The rest came together quite naturally. The sweet and earthy flavors against the salty feta are perfect. You'll have more mashed roasted squash than you need for one sandwich. Use it in another, or freeze it for another night when you're too tired to cook.

Grilled Feta and Roasted Squash Sandwich image

Steps:

  • Preheat the oven or toaster oven to 425 degrees. Line a baking sheet with parchment. Toss the squash with 1 tablespoon of the olive oil and salt and pepper to taste. Place in the oven and roast until tender and lightly caramelized, 20 to 25 minutes, stirring every 10 minutes. Remove from the oven and transfer to a bowl.
  • Mash the squash with a fork. Stir in the sage. Taste for salt and pepper and add if desired. Measure out 1/4 cup (freeze or refrigerate the rest) and spread on one slice of the bread. Top with the crumbled feta and walnuts. Top with the remaining slice of bread and press down to secure. Drizzle the remaining olive oil over the top slice.
  • Toast in toaster oven 3 to 4 minutes, until the cheese has melted. Remove from the oven, press down firmly, cut in half and serve.
