OVEN STEAK

Here's a fast, fuss-free way to cook the perfect steak-no smoky stovetop cooking necessary. The secret to getting a nice sear is to preheat the skillet in the oven. When the meat hits the hot surface, it creates a delectable crust.

Steps:

  • Sprinkle both sides of the steaks all over with 1 teaspoon salt and 1/4 teaspoon pepper, then let sit out at room temperature for 30 minutes.
  • Meanwhile, position a rack in the center of the oven and place a 12-inch cast-iron skillet on the rack. Preheat the oven to 450 degrees F.
  • Carefully remove the hot skillet from the oven and add the steaks, making sure they are spaced apart, so they don't steam. Top each steak with 1 sprig of thyme, one-half sprig of rosemary and 1 tablespoon cold butter. Return the skillet to the oven and cook until the undersides of steaks are well browned, about 4 minutes.
  • Carefully remove the skillet from the oven and flip the steaks using tongs, then continue to cook until desired doneness, about 2 minutes more for medium-rare and 3 minutes more for medium. Remove the steaks from the skillet and let rest 5 to 10 minutes before slicing and serving.

2 New York strip steaks (each 8 to 10 ounces and 3/4 inch thick)
Kosher salt and freshly ground black pepper

2 tablespoons unsalted butter, cold

  • Preheat the oven to 500 degrees F (260 degrees C).
  • Mix olive oil and grill seasoning together in a large bowl. Add potato wedges and toss to coat.
  • Line 2 baking sheets with aluminum foil. Crumple up foil slightly and grease with cooking spray. Arrange potato wedges on the foil so that they are not touching and have enough room to cook.
  • Bake in the preheated oven, turning once, until brown and crispy, about 25 minutes.

Well-Done Steak with Blue Cheese Compound Butter image

Steps:

  • Combine the 1 cup butter, blue cheese, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a food processor. Process until well blended and smooth. Transfer to a sheet of plastic wrap and roll into a cylinder. Wrap tightly and place in the freezer to chill.
  • Remove the steaks from the refrigerator and let them come to room temp for 30 to 45 minutes. Meanwhile, preheat the oven to 450 degrees F.
  • Sprinkle the steaks with salt. Heat a cast-iron grill pan over high heat until starting to smoke, then add a small amount of oil to the pan. Place the steaks in the pan and cook for 4 minutes. Flip and cook for another 4 minutes. Turn off the oven and transfer the pan to the oven for 8 minutes, or until the steaks reach an internal temperature of 155 degrees F.
  • Place 1/2 tablespoon of the remaining butter on each steak and allow the steaks to rest for 5 minutes before serving; the internal temperature will climb another 5 degrees.
  • Serve the steaks topped with blue cheese compound butter.

  • In a food processor combine and process until smooth the blue cheese, cream cheese, butter and Port. Adjust seasoning and texture with more or less butter or Port. Season with pepper.
  • Transfer to the refrigerator (you can do 2 weeks before serving). 1 hour before serving, bring mixture to room temperature, fold in the nuts and transfer to smaller ramekins.
  • Serve with crackers, celery, fennel or jicama

4 ounces cream cheese
8 tablespoons softened sweet butter
1/4 cup Port
Fresh black pepper
2 cups chopped toasted walnuts
