GREEN TOMATO CASSEROLE- OLD FASHIONED SAVORY PIE
This is a very old recipe that my Grandmother had saved. I only remember her making this a few times. As a kid I didn't like it. But now I sure do. Green tomatoes are just awesome! And this recipe makes them even better.

- 1. Preheat oven to 325 degres. Slice tomatoes about 1/2 inch thick and layer the slices in a buttered glass baking dish. Sprinkle tomatoes with lemon juice, then brown sugar and salt and pepper. In a medium skillet melt butter. Mix the bread crumbs and cracker crumbs together in the pan with the butter. Stir constantly and to mix and lightly brown the crumbs. Sprinkle this over the top of the tomatoes. Bake at 325 degrees until tomatoes are tender but not mushy (about 25-35 min). These may take a little longer depending on your tomatoes.
GREEN TOMATO CASSEROLE
Green tomatoes are one of the first staple garden plants to come on. This is a take off on traditional fried green tomtoes. Very easy to prepare and makes a wonderful side dish.

- 1. Preheat oven to 400. Melt 1/2 of a stick of butter in a 2 qt casserole dish and 1/2 of a stick of butter in a separate microwave safe cup
- 2. Chop green tomatoes into 1-2 inch chunks. In a mixing bowl whip egg and buttermilk together. Add tomatoes to bowl and coat well
- 3. Place 2 cups of the bread crumbs and corn meal in a gallon size bag, shake to mix, add tomato dices and shake to coat completely
- 4. Add coated tomato dices to casserole dish and pour remaining melted butter over.
- 5. Add remaining 1 cup of bread crumbs and. One meal, sprinkling over the top, then add Parmesan cheese, sprinkling over the top
- 6. Bake for 30 min till golden brown on top and enjoy!!
SCALLOPED GREEN TOMATOES
Thinly sliced green tomatoes are served gratin-style in this recipe from Miller Union chef Steven Satterfield.

- Heat 1 tablespoon butter in a small saucepan over medium heat. Add celery, shallot, onion, peppercorns, bay leaf, and thyme sprigs, and season with salt; cook, stirring, until vegetables are soft and translucent.
- Add cream and bring to a simmer; remove from heat and let steep 15 to 20 minutes. Strain cream into a small container with a spout, gently pressing on solids to extract flavor. Discard solids and set cream aside.
- Using remaining tablespoon butter, butter a 9-by-7-inch or 2-quart baking dish; set aside. Using a mandolin, very thinly slice tomatoes into 1/16-inch slices, discarding any irregular or unusable pieces. Layer tomatoes close together and slightly overlapping so that they cover bottom of entire dish; season with salt and pepper. Repeat process, making 5 layers of tomatoes and seasoning between each. Let stand 15 minutes.
- Preheat oven to 325 degrees.
- Using a second baking dish about the same size as the one containing the tomatoes, press down on surface of tomatoes and drain any liquid that has accumulated in the dish; discard liquid and remove second baking dish.
- Top tomatoes with breadcrumbs; do not press down. Evenly pour reserved cream over top so that breadcrumbs are moistened. Transfer to oven and bake until breadcrumbs are golden brown and tomatoes are tender, 40 to 50 minutes. Top with fresh thyme leaves and serve immediately.
GREEN TOMATO CASSEROLE

- Arrange one layer of tomatoes in the bottom of 1 ½ quart casserole.
- Sprinkle with sugar, salt and pepper 1/3 of bread crumbs and 1/3 cheese.
- Repeat layers twice omitting the cheese from the top.
- Dot butter over the bread crumbs on top.
- Cover and bake at 400 degrees for one hour.
- Add remaining cheese, bake uncovered until cheese melts.
GREEN TOMATO AND VIDALIA ONION GRATIN

- Preheat the oven to 350 degrees F.
- Render bacon in a large skillet over medium heat. Transfer the cooked bacon to a paper towel lined plate. Add the bread crumbs to a small bowl. Remove 2 tablespoons of the bacon fat from the skillet and stir into the bread crumbs. Add the onion rounds to the skillet in batches and cook, without breaking the round slices apart, until there is some golden color, about 5 to 6 minutes per side.
- To assemble the gratin, overlap the green tomato slices in 1 row in a large baking dish, about 9 by 11 inches. Next, make a row slightly overlapping of the partially cooked onion rounds, being careful to keep the slices intact. Repeat steps until all tomatoes and onions are used. Season tomatoes and onions lightly with salt and heavily with pepper. Crumble the bacon over the vegetables; sprinkle the grated Cheddar over the top followed by the bread crumbs. Bake until the cheese is bubbly, about 30 to 45 minutes. If the top is getting too brown, loosely cover with foil.
GREEN BEAN AND TOMATO CASSEROLE

- Preheat the oven to 425 degrees F. Heat 3 tablespoons olive oil in a large pot or Dutch oven over medium-high heat. Add the tomato paste and cook, stirring, until slightly darkened, about 2 minutes. Add the rosemary, garlic and red pepper flakes and cook until the garlic starts browning, about 1 minute.
- Add the green beans, cherry tomatoes and their liquid, 1 3/4 cups water and 2 teaspoons salt to the pot. Partially cover and cook, stirring occasionally, until the green beans are tender and the liquid is slightly thickened, 20 to 25 minutes. Transfer to a 3-quart baking dish.
- Mix the panko, parmesan, parsley and the remaining 2 tablespoons olive oil in a bowl; season with salt and pepper. Sprinkle over the green bean mixture and bake until the sauce is bubbling and the topping is browned, about 15 minutes.

- Preheat oven to 400°F Lightly grease a 1½-quart casserole, deep-dish pie pan, or 4 ramekins.
- Place bread in a food processor and pulse to a coarse texture. Combine sugar, salt and pepper in a small bowl; mix well.
- Arrange one-third of the tomato slices in the bottom of pan. Sprinkle one-third of the sugar mixture, one-third of the bread crumbs, and 1/3 cup Cheddar over tomatoes. Repeat with a second layer. For third layer, add remaining tomatoes, sugar mixture and bread crumbs. Dot with butter. Cover with foil.
- Bake1 hour. Uncover and sprinkle remaining 1/3 cup Cheddar on top. Bake 5 minutes longer, or until cheese melts. Remove from oven and let stand 15 minutes before serving to allow the flavors to blend.
