GROUND BEEF CASSEROLE WITH RICE
This ground beef casserole with rice is the perfect casserole for using whatever you have lying around in your fridge.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Add bell pepper, tomato, and Worcestershire sauce. Cook and stir until pepper has slightly softened, about 5 minutes. Strain 1/2 of the liquid from the canned diced tomatoes into the mixture.
- Stir diced tomatoes, onion, garlic, oregano, basil, salt, and pepper into the ground beef mixture. Simmer until some of the liquid has reduced, about 10 minutes. Add rice and mix well. Transfer to a casserole dish and sprinkle Cheddar cheese on top.
- Bake in the preheated oven until filling is heated through and cheese is melted, about 45 minutes.

This is really a easy dinner to put together. I usually make it when I have things I need to do around the house. I put it in the oven, do my laundry, vaccum the house and when I'm done dinner is ready!!!

- Brown and season steak.
- Place in casserole dish.
- Pour rice over steak.
- Mix broth, consomme and water.
- Pour over steak and rice.

- Brown beef with onion (if using) and drain.
- Add rice, soup, water, celery, peppers (if using), salt and black pepper, mix well.
- Place in greased two-quart casserole dish and bake, covered, for 1 hour and 15 minutes at 350 degrees F.

- Preheat oven to 475 degrees. Combine breadcrumbs, Parmesan, and 1 tablespoon oil. In a large cast-iron skillet, bring meat sauce to a rapid simmer over high. Stir in rice and remove from heat. Top with onion, then carefully arrange zucchini in a single, slightly overlapping layer. Season with salt and pepper, drizzle with remaining tablespoon oil, and top with breadcrumb mixture. Return to heat and bring to a simmer. Cover with foil and bake 10 minutes. Remove foil and bake until rice is cooked through and breadcrumbs are golden, about 10 minutes more. Let cool 5 minutes before serving.
