STEAMED PAK CHOI
An easy, low fat Asian side dish. Try serving with our twice-cooked sticky duck

Steps:
- Cut 3 heads of pak choi in half lengthways. Steam for 3 mins or until just wilted. Dress with some sliced red chilli if you like, or if you're cooking the twice cooked sticky duck recipe, dress with the simmered stock.

STEAMED FISH WITH GINGER & SPRING ONION

Steps:
- Heat oven to 200C/180C fan/gas 6. Cut a large rectangle of foil, big enough to make a large envelope. Place the pak choi on the foil, followed by the fish, then the ginger and garlic. Pour over the soy sauce and rice wine, then season.
- Fold over foil and seal the 3 edges, then put on a baking sheet. Cook for 20 mins, open the parcel and scatter over the spring onions and coriander. Serve with brown rice and squeezed lime juice.

- Preheat the oven to 200°C, fan 180°C, gas mark 6. Cut four 60x30cm rectangles out of baking paper and another four out of kitchen foil. Arrange the foil rectangles on a baking tray and layer the paper rectangles on top.
- Divide half of the pak choi between each parcel then top with a fish fillet. In a small bowl, whisk together the soy sauce, sweet chilli and grated ginger to make a sauce. Pour the sauce over the fish, then top with the spring onions, sliced ginger and chilli. Scrunch the edges of the parcels together, to enclose tightly then bake for 12-15 minutes, or until the fish is cooked through.
- Meanwhile, cook the rice to pack instructions, then stir through the lime juice. Serve the fish and rice with any cooking juices spooned over the top and the lime wedges on the side.

- Heat the oven to 220°C/200°C fan/gas 7. Put each foil sheet on the work surface shiny side down and lay a baking paper sheet on top. In a bowl, toss the frozen fish with the veg and a pinch of black pepper.
- Mix the soy, mirin, wine vinegar, and lime zest and juice to make a dressing. Add most to the fish and vegetables, then toss well to coat.<span class="Apple-converted-space
- Divide the fish and vegetables equally between the 2 sheets of baking paper, then wrap the paper tightly around the fish and veg to seal them inside. Fold up the foil around the paper and seal to make a parcel. Put the parcels on a baking tray and bake for 16-18 minutes or until piping hot and the fish is cooked.
- Meanwhile, put a pan of water on a high heat with a steamer basket fitted inside. When the water is boiling, reduce the heat a little and steam the pak choi for 3-4 minutes until tender, then toss with the reserved dressing. Serve the fish parcels with the steamed, dressed pak choi on the side.
