Steps:

  • Bring a pan of water to the boil. Finely slice the ginger and lay in the base of a steamer (preferably a bamboo one).
  • Squeeze the lemon or lime juice over the salmon, season with salt and sit the fillets on top of the ginger.
  • Place the steamer over the water, cover with the lid and cook for 5 minutes or until the fish is cooked. Serve immediately with stir-fried vegetables and noodles or rice.

Chinese cooks traditionally steam fish with ginger and scallions, which are said to mollify the flavor of the fish. Chef Danny Chan's innovative twist is the addition of refreshing lemon. When Chef Chan steams shrimp, scallops and lobster, he uses the same method, but omits the soy sauce.

Danny Chan's Steamed Salmon with Lemon image

Steps:

  • Thoroughly rinse the fish in cold water and pat dry. Put the fillets in a 9-inch shallow heatproof bowl. Drizzle the soy sauce, salt and pepper over the salmon. Sprinkle with the scallions and ginger. Cut the lemon in half crosswise. Cut half a lemon into 4 slices and put on the fish. Juice the remaining lemon and drizzle over the fish.
  • Put a 1-inch-high steamer rack in a 14-inch flat-bottomed wok. Add water to a depth of 3/4 inch and bring to a boil over high heat. Carefully put the bowl on the rack, cover, and steam for 8 to 10 minutes. Test the fish for doneness by poking the thickest party with a chopstick or fork; the fish should flake. If not, steam 1 to 2 minutes or until the fish just flakes. Be sure to check the water level from time to time and replenish if necessary, with boiling water. Carefully remove the bowl from the wok. Drizzle the sesame oil over the fillets.

Steamed Salmon with Garlic and Ginger image

Steps:

  • To make the flavoring sauce, in a small bowl, combine the sugar, pepper, oyster sauce, and soy sauce and stir to dissolve the sugar. In a small skillet or saucepan, heat the oil over medium heat. Add the garlic and sauté for 15 to 20 seconds, or until fragrant. Add the ginger and cook for about 1 minute, or until aromatic and pliant. Pour in the oyster sauce mixture and bring to a boil. Add the chopped scallion, stir to combine, and remove from the heat. Set aside. (The sauce may be prepared up to 4 hours in advance. Let cool, then cover it to prevent it from drying out. Keep at room temperature until ready to use.)
  • Select a heatproof plate or nonreactive cake or pie pan 1 inch smaller in diameter than your steamer tray. (Ideally, you will be able to serve the fish from whatever you choose, thus avoiding the need to transfer it to a serving plate.) Set aside a few scallion strips for garnish and scatter the rest on the plate or pan. Arrange the fish on top and pour on the flavoring sauce. Place the plate or pan in the steamer tray.
  • Fill the steamer pan half full with water and bring to a rolling boil over high heat. Place the tray in the steamer, cover, and steam the fish for 8 to 10 minutes, or until a knife inserted at the thickest part easily pierces the flesh all the way to the bottom.
  • When the fish is done, turn off the heat. Use pot holders or a Chinese steamer retriever (see Note, opposite) to remove the plate or pan from the steamer (you may find it easier to put the steamer tray on the counter first) and place it on a platter. Or, use 2 wide spatulas to transfer the fish to a warmed serving platter and pour the juices on top. Garnish with the reserved scallion strips and the cilantro and serve immediately.

Flavoring Sauce
1 1/4 teaspoons sugar
1/4 teaspoon black pepper
2 tablespoons oyster sauce
2 tablespoons light (regular) soy sauce
2 1/2 tablespoons canola or other neutral oil
3 cloves garlic, finely chopped
Chubby 2-inch piece fresh ginger, peeled and finely shredded (see page 51)
3 scallions, green part only, chopped
1 scallion, white part only, cut lengthwise into thin strips
1 1/4 pounds salmon fillet, halved crosswise into 2 equal pieces, or 2 salmon steaks, 10 to 12 ounces each
4 to 6 sprigs cilantro

Seared Salmon with Citrus-Soy Glaze image

Steps:

  • Toss first 4 ingredients in large bowl to combine. Whisk vinegar, 1/4 cup canola oil, 1 tablespoon soy sauce and sesame oil in medium bowl. Set vinaigrette aside.
  • Heat remaining 1 tablespoon canola oil in heavy large skillet over medium-high heat. Sprinkle salmon with salt and pepper; add to pan. Cook salmon until brown on 1 side, about 4 minutes. Turn and cook until opaque in center, about 2 minutes longer. Transfer salmon to plate; tent with foil to keep warm. Add ginger and garlic to same skillet. Sauté 1 minute over medium-high heat. Add orange and lime juices and 1 teaspoon soy sauce; boil until mixture is reduced to 1/4 cup glaze, about 3 minutes. Remove from heat. Rewhisk vinaigrette. Add to vegetable mixture and toss to coat. Divide equally among plates. Place 1 salmon fillet atop vegetables on each plate. Drizzle glaze over salmon and serve.

Roasted Salmon With Ginger-Lime Butter image

Steps:

  • Lay the salmon on a rimmed baking sheet, and season with salt and pepper. Heat oven to 350 degrees.
  • Make the ginger-lime butter: In a small bowl, combine softened butter, ginger, lime zest, lemon zest and lime juice. Add salt and pepper to taste, and stir well to combine.
  • Transfer salmon, uncovered, to the oven to cook for about 8 minutes. Check the salmon once or twice as it cooks. Depending on the thickness of the fish, it should be fully cooked when little white juices appear on the surface - moist and yielding with big flakes when probed. It may take 10 minutes for thick fillets.
  • As the salmon cooks, put 2 tablespoons ginger-lime butter in a wide deep skillet or large pot over medium heat. When butter is melted, add spinach and a pinch of salt. Put on the lid and turn heat to medium-high. (You may need to add the spinach in batches.) After 2 minutes, remove lid and stir spinach to help it wilt. When all spinach is wilted, turn off the heat.
  • Transfer salmon to a platter or divide among individual plates. Smear the remaining ginger-lime butter on the fish. Surround with wilted spinach and lime wedges, and top with scallions.

Grilled Gingered Salmon image

Steps:

  • Whisk together the soy sauce, muscovado sugar, minced ginger, olive oil, and garlic in a bowl, and pour into a resealable plastic zipper bag. Add the salmon fillet, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator overnight or up to 2 days.
  • About 1/2 hour before grilling, soak cedar plank in water.
  • Preheat an outdoor grill for medium heat, and lightly oil the grate.
  • Remove the salmon from the marinade, and shake off excess. Discard the remaining marinade. Place the salmon, skin side down, onto the cedar plank.
  • Grill with the grill cover closed until the salmon is opaque but still juicy, about 20 minutes. Carefully remove the salmon from the plank in one piece, leaving the skin on the plank.

Steamed Salmon With a Creamy Citrus Sauce over Spinach image

Steps:

  • Fish -- A easy way to steam salmon is to individually wrap the fillets in saran wrap and steam right in a colander over a pan of water. No clean up and easy. So, my trick is to set a 10x10 piece of plastic wrap in a small cereal bowl or something similar. Then, set the salmon skin side down on the plastic wrap and top with butter, salt and pepper, 2 orange slices and then 1/4 cup wine. Wrap up the salmon like a little package and you are ready to cook it. Bring a medium pan or pot of water to a boil and set a colander or strainer over the top. This way you will be steaming your fish. As the water comes to a boil, start your sauce.
  • Sauce -- In a small pot add the butter and melt on medium heat, add the flour and mix to make a roux. Cook another minute until well combined. Add in 3/4 cup of the vegetable broth, garlic and cream and cook on medium (not boiling) until thickened. It will take about 7-10 minutes. Once thickened, add the lemon and orange juice, parsley and check for seasoning and add salt and pepper to taste. Set on low while you finish the fish and spinach. Before I serve the sauce I add the remaining 1/4 cup broth to thin it out just a bit.
  • Fish Steaming -- Your water is boiling and the salmon is wrapped. As you were making the sauce. Just set your 4 packets on the colander or steamer and cover. You just want the water level so it doesn't come up through the colander or steamer. Cover -- I use an over sized lid or even just a piece of foil. Don't worry if it doesn't fit, it is just meant to keep some of the steam inches The fish will take around 15 minutes.
  • Spinach -- Sauce is done, fish is cooking. Time to saute your spinach. In a large saute pan, add the olive oil and pancetta and cook 4-5 minutes until golden brown. Add in the onion and cook another couple of minutes. Then add in the spinach and a couple of tablespoons of broth and cook just a few minutes until wilted. I don't like to over cook the spinach.
  • Plate -- Place a bed of spinach on each plate. Unwrap the steamed / poached salmon and place each piece on the bed of spinach. Don't worry about the wine in the bottom of the packets, that was just to keep the fish moist as it cooked, but it certainly couldn't hurt to add it right over the spinach.
  • Note: The skin should come right off when you remove from the packets.
  • Top the salmon with the citrus sauce and enjoy. Serve with some buttered new potatoes.
  • Plate the spinach, nicely wilted but still not too overdone, top with the salmon, orange slices and some of the wine and butter and then top with the citrus sauce.
  • Add some new potatoes on the side or rice pilaf makes for a very nice dinner.
