STILTON BURGERS

Send the last lazy days of the season out in style by grilling peak-quality meats, fruits, fish and even vegetables. This burger is truly beautiful and it tastes superb, with the cheese melting over the beef with caramelized onions atop - with fresh green lettuce and sliced tomato on the bottom - it looks very pretty. Steps:

  • Preheat grill to medium-high heat.
  • Heat a large skillet over medium heat; add oil to pan.
  • Add sliced onion and 1/4 teaspoon salt; cook 18 minutes or until golden, stirring occasionally.
  • Combine 1/4 teaspoon salt, beef, and next 4 ingredients; toss gently.
  • Divide mixture into 4 equal portions, shaping each into a 1/2-inch-thick patty.
  • Place patties on a lightly sprayed grill rack; grill 4 minutes on each side or until desired degree of doneness.
  • Top each patty with 1 tablespoon cheese during last 2 minutes of cooking.
  • Place cut sides of rolls on grill rack; grill for 1 minute.
  • Place bottom halves of rolls on 4 plates; top each serving with 1 lettuce leaf, 1 tomato slice, 1 patty, 1/4 cup onion mixture, and 1 roll top.

1 lb ground sirloin
2 tablespoons grated onions

1/4 cup crumbled Stilton cheese
4 french hamburger buns, spli (4 ounce)
4 green leaf lettuce leaves
4 slices tomatoes (1/4 inch thick)

Steps:

  • Combine the beef, onion and celery. Season with salt and pepper and combine well.
  • Stir in the herbs and mustard.
  • Divide the mixture into 8 equal portions.
  • Place 4 on a work surface and flatten slightly.
  • Place the crumbled cheese in the center of each.
  • Flatten the remaining 4 portions and place on top.
  • Mold together, encasing the crumbled cheese and shape into 4 burgers.
  • Grill under moderate heat for 10 minutes, turning once.
  • Split the burger buns and serve the burger on these.
