- Preheat oven to 400 degrees F.
- Slice tomatoes in half horizontally and scoop out pulp and seeds. Salt insides and rest upside down on a sheet pan lined with a wire rack to extract juices, about 15 minutes. Meanwhile, in a medium bowl, mix together bread crumbs, garlic, basil, pepper, 1/4 cup of the grated Parmesan and oil. Stuff tomatoes with the filling, sprinkle with remaining Parmesan, and bake until tomatoes are cooked through and tops are golden brown, about 30 minutes.

- Cut the tops off of the tomatoes and use a knife to cut around the inside, separating the flesh from the skin. Scoop out the flesh. Place the tomatoes in a small baking dish. In a small bowl combine the canned tomatoes with the bread crumbs, 1/3 cup of cheese and the sausage; mix well. Spoon the mixture into the tomato skins and top with the remaining 1/3 cup of cheese.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Cut tops from tomatoes and scoop out the pulp; transfer pulp to a bowl and chop. Reserve tops of tomatoes.
- Bring water to a boil in a saucepan, pour in the rice, and cover pan; let stand until rice absorbs water, about 5 minutes.
- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Mix cooked rice, onion, garlic, garlic salt, and black pepper into ground beef; add reserved tomato pulp and tomato sauce. Bring the mixture to a boil, reduce heat to low, and simmer until thickened, 10 minutes.
- Set hollowed-out tomatoes into the prepared baking dish and fill each tomato with ground beef mixture. If desired, place tomato tops back on filled tomatoes. Pour tomato juice over filled tomatoes for extra juiciness.
- Bake in the preheated oven until tomatoes are tender and filling is hot, about 20 minutes.

- 1. Cut tops off Green peppers and rinse. In a large mixing bowl, Combine raw meat mixtures. Add seasoning and Worcestershire sauce and egg. 1 cup of cooked rice, Mix well. Scoop into green pepper cups almost to the top.
- 2. In a 5 qt Dutch Oven or pasta pot, add 29 ounce can of Tomato Sauce. Add reserved seasonings. Mix well. Wash and cut potatoes in to cubes. Leaving the skin on. Mix well.
- 3. Place the stuffed peppers into the mixture sitting upright. Add Potatoes on top of peppers Cook with a lid on medium for about 45 Minutes. When the potatoes are tender, it is usually done. I would not go any less than 45 minutes.
- 4. When it is done, Place a pepper on the plate, cut it down the middle, place some of the potato mixture with sauce on top of the pepper. Add sprinkle of Mozzarella cheese.. ENJOY.

- Chop off the top of each pepper. Core out that green pepper taking out as many seeds and veins as possible. The peppers should look like a cup.
- Mix together the beef, onion, water, rice, salt & pepper.
- Fill each pepper being careful not to press the stuffing down too much (the rice will expand as it cooks).
- Place the peppers, stuffed side up, in a pot. Fill the pot with enough water to come halfway up the side of the peppers.
- Cook on low for 90 minutes until the stuffing is cooked through.
- Drain the water, reserving the liquid.
- Mix the tomato soup, evaporated milk, and sugar. Add enough of the reserved liquid to make the soup the correct consistency.
- Warm and add the peppers. Enjoy!

- A big platter of these tomatoes goes well with grilled meat or fish, or serve them as a starter with cured meats and crusty bread.
- Heat oven to 200C/fan 180C/gas 6. Toast the bread, then remove the crusts and break it up into the food processor to make crumbs. Add the thyme, chives or parsley, oil and garlic, then pulse briefly to mix.
- Halve the tomatoes and put in one layer in a shallow ovenproof dish. Spread each cut side with a little mustard, then sprinkle a little of the crumb mix on the top. Bake for 15-20 mins until the topping is crunchy and lightly browned.
