GARY'S STRANGE FLAVORED CHICKEN

We have a neighborhood Chinese restaurant that we love and have been going to for years. One of our favorite takeout meals was a Szechuan style dish called Strange Flavored Chicken. Steps:

  • 1. Gather all your ingredients and prep. everything ahead of time. Once you start cooking it will go quick and easy that way.
  • 2. In a large skillet or wok, heat the oils over medium-high heat
  • 3. Liberally season chicken with the Chinese five spice.
  • 4. In a small bowl, combine broth, hoisin sauce, soy sauce, Chinese hot mustard, ginger, and cornstarch. Set aside. * Note. I often use dried shiitake mushrooms for this dish. when I do I save the water I use to reconstitute them and then add a chicken bouillon cube to it and this is what I use for the broth.
  • 5. Add the chicken to the hot skillet and cook for 4 to 5 minutes or until lightly browned.
  • 6. Add the snow peas, mushrooms, chilies, carrots ,bell pepper, and onion and cook an additional 5 minutes, stirring frequently. Stir in the water chestnuts.
  • 7. Add the sauce mixture to the skillet and bring to a boil over medium-high heat. Reduce heat to medium to medium-low, and simmer for 4 to 5 minutes, or until sauce thickens.
  • 8. * Note: This dish goes great over hot cooked rice or rice noodles.

1 Tbsp vegetable oil
1 Tbsp sesame oil
2 Tbsp chinese five spice powder
2 lb boneless, skinless chicken breast, cut into 1/2-inch pieces
4 oz fresh snow peas (trimmed

1 8 oz can sliced water chestnuts, drained

1/4 c hoisin sauce
1 Tbsp chinese hot mustard
1 Tbsp soy sauce

STRANGE FLAVORED SESAME CHICKEN

This is delicious and not so strange! I definitely recommend using fish sauce if you can find it. I adapted this from a recipe I found in a bargain asian cookbook.

Steps:

  • Sift flour, 2 tablespoons cornstarch, baking soda, and baking powder into a bowl. Pour in low-sodium soy sauce, sherry, 2 tablespoons water, vegetable oil, and a dash of sesame oil; stir until smooth. Stir in chicken until coated with the batter, then cover, and refrigerate for 20 minutes.
  • Meanwhile, bring chicken broth, sugar, vinegar, dark soy sauce, sesame oil, chile paste, and garlic to a boil in a saucepan over high heat. Dissolve 1/4 cup cornstarch into 1/2 cup of water, and stir into boiling sauce. Simmer until the sauce thickens and turns clear, about 2 minutes. Reduce heat to low, and keep sauce warm.
  • Heat olive oil in a deep fryer or large saucepan to a temperature of 375 degrees F (190 degrees C).
  • Drop in the battered chicken pieces, a few at a time, and fry until they turn golden brown and float to the top of the oil, 3 to 4 minutes. Drain on a paper towel lined plate. To serve, place fried chicken pieces onto a serving platter, and pour the hot sauce overtop. Sprinkle with toasted sesame seeds to garnish.

  • Combine all sauce ingredients in a small saucepan and bring to a boil. Lower heat and simmer on a low flame until sauce becomes syrupy, about 15 to 20 minutes. Cool to room temperature, then strain out spices and store sauce in an airtight jar or bottle.
  • Set a large pot of water to boil. Mince or press garlic and combine it with 2 tablespoons water in a large measuring cup. Let it rest a few minutes (to tame the taste), then stir in the sesame paste. (If your sesame paste is not runny, you may add another tablespoon or two of water). Add chili oil, sweet soy sauce, vinegar and Sichuan pepper oil or powder and mix well.
