- In a shaker, muddle strawberries and basil. Fill shaker three-fourths full with ice. Add the remaining ingredients; cover and shake 10-15 seconds or until condensation forms on outside of shaker. Strain into a chilled cocktail glass.

- Add lots of ice to a large cocktail or wine glass and stir to chill the glass. Drain any melted water.
- Quarter the strawberries. In a cocktail shaker, muddle the basil leaves. Add the strawberries and muddle again. Add the gin and a handful of ice. Shake until cold, and then stain into cocktail glass.
- Add the garnishes and then pour the tonic water onto a bar spoon into the glass (to increase the bubbles). Stir once. Garnish with strawberries and additional basil leaves (important for the basil nose on the drink!) and serve.

- Make the strawberry syrup: Combine the strawberries, agave and lime juice in a blender. Blend until smooth. Optional: Strain the syrup through a fine mesh sieve to remove seeds.
- Prepare the cocktail (SEE NOTES): Fill a cocktail shaker 1/2 to 3/4 full with ice. Pour in ¼ cup of the strawberry syrup. Add in the vodka. Shake for about 10 seconds, or until the shaker begins to frost and is cool to the touch.
- Add soda & pour cocktail: Add the sparkling wine (or club soda) to the shaker. Strain the cocktail into the prepared cocktail glass.
