Mango (or Papaya) Strawberry Fruit Smoothie image

Steps:

  • Peel the mango and cut all of the fruit away from the seed. Wash the strawberries and cut off the stems. Place the fruit into a blender along with the remaining ingredients and blend till smooth, pureed and creamy. Sereve in chilled glasses.;

1 ripe mango or papaya
1 pint strawberries
1/4 cup coconut milk
2 cups cold orange juice
1 cup cold pineapple juice
3 tablespoons honey
2 tablespoons brewer's yeast (available in health food stores)

Strawberry - Papaya Chia Jam image

Steps:

  • In a pot, mash together the strawberries, papaya, coconut water, lime juice and pectin.
  • Bring mixture to a full rolling boil that cannot be stirred down.
  • Add the sugar and chia seeds and return mixture to a full rolling boil.
  • Boil hard 1 minute, stirring constantly. Remove from heat and pour into jars.

Strawberry-Passion Fruit Pavlova image

Steps:

  • Make the meringue: Preheat oven to 250 degrees. Draw an egg shape 10 inches long and 8 inches wide at widest point onto a piece of parchment. Turn parchment over, and use it to line a baking sheet. Beat egg whites and cream of tartar with a mixer until soft peaks form. Gradually beat in superfine sugar, then cornstarch and salt, beating until stiff, glossy peaks form. Fold in vinegar and vanilla.
  • Using egg drawing as a guide, gently mound meringue on parchment; smooth sides. Bake 1 1/2 hours. Turn heat off, and let meringue cool in oven 2 hours.
  • Make the ricotta cream: Scrape seeds from vanilla bean, and blend them with ricotta and granulated sugar in a food processor until smooth. Transfer to a bowl, and whisk in heavy cream until thick and spoonable.
  • For serving: Cut passion fruits in half, and scoop out pulp and seeds. With the back of a spoon, crack a hole in top of meringue, and fill with ricotta cream. Layer on strawberries and passion fruit. Serve immediately.

A great day starter from BH&G! Papaya Tips: Choose papayas that are partly yellow and feel slightly soft when pressed. The skin should be smooth and free from bruises or very soft spots. A firm, unripe papaya can be ripened at room temperature for 3 to 5 days until mostly yellow to yellowish orange in color. In parts of Bavaria, country folk still practice the annual rite each spring of tying small baskets of wild strawberries to the horns of their cattle as an offering to elves. They believe that the elves, who are passionately fond of strawberries, will help to produce healthy calves and abundance of milk in return. The American Indians were already eating strawberries when the Colonists arrived. The crushed berries were mixed with cornmeal and baked into strawberry bread. After trying this bread, Colonists developed their own version of the recipe and Strawberry Shortcake was created. In Greek and Roman times, the strawberry was a wild plant. The English "strawberry" comes from the Anglo-Saxon "streoberie" not spelled in the modern fashion until 1538. The first documented botanical illustration of a strawberry plant appeared as a figure in Herbaries in 1454. In 1780, the first strawberry hybrid "Hudson" was developed in the United States. Legend has it that if you break a double strawberry in half and share it with a member of the opposite sex, you will fall in love with each other. The strawberry was a symbol for Venus, the Goddess of Love, because of its heart shapes and red color. Queen Anne Boleyn, the second wife of Henry VIII had a strawberry shaped birthmark on her neck, which some claimed proved she was a witch. To symbolize perfection and righteousness, medieval stone masons carved strawberry designs on altars and around the tops of pillars in churches and cathedrals. The wide distribution of wild strawberries is largely from seeds sown by birds. It seems that when birds eat the wild berries the seeds pass through them intact and in reasonably good condition. The germinating seeds respond to light rather than moisture and therefore need no covering of earth to start growing. Medicinal Uses The strawberry, a member of the rose family, is unique in that it is the only fruit with seeds on the outside rather than the inside. Many medicinal uses were claimed for the wild strawberry, its leaves and root. The ancient Romans believed that the berries alleviated symptoms of melancholy, fainting, all inflammations, fevers, throat infections, kidney stones, halitosis, attacks of gout, and diseases of the blood, liver and spleen.

  • If making the layered popsicles, prepare the strawberry part of the popsicles by blending the strawberries (save a few if you want to dice them and add some strawberry chunks to the popsicles) with 1 cup of water and ¼ to ½ cup of sugar or honey. Taste and adjust the sweetness level based on your preference.
  • Pour either of the strawberry mix or the passion fruit juice into each popsicle mold until it is half full. You can alternate and make some with a bottom layer of strawberry and some with a bottom layer of passion fruit. If using cups as molds, usually put them in the freezer for about an hour, and then add the popsicle stick (if not it will be slightly slanted – which is also fine). When the first layer is almost frozen, usually a few hours later, add the second layer of strawberry or passion fruit. Return them to the freezer and let them freeze completely before serving.
  • For the option of combining the strawberry and passion fruit juice, just mix the juice together, and fill the molds. Or fill each mold with half of the strawberry mix, and immediately finish filling with the passion fruit juice. Place in the freezer and add the popsicles sticks after about an hour – or add them before if you don’t mind the sticks being slanted.
  • For the easy option of using chopped strawberries and passion fruit juice, dice and slice the strawberries, then place the chopped strawberries in the popsicle molds and pour in the passion fruit juice. Place a popsicle stick in the middle of each mold. Place the popsicles in the freezer until completely frozen before serving, about 4 hours.
