STRESSED MOM'S CHICKEN WITH YELLOW RICE, BROCCOLI & CHEESE
I got this recipe from an equally stressed friend when my children were small. It saved us many nights when I was just too tired to cook a full meal. It's comfort food at its best and my children still request it when they come home to visit. Serve with hot rolls and you've got meat, veggies, and bread in one dish. Yummmm!

- Preheat oven to 350°F.
- Lightly spray a 2-quart casserole with cooking spray.
- In saucepan, prepare yellow rice according to package directions.
- Meanwhile, prepare broccoli in microwave according to package directions and drain.
- Mix all ingredients together and put into casserole.
- Bake, loosely covered with foil, at 350°F for 25-30 minutes until hot and bubbly.

- Add onion, garlic, rice, chicken broth, salt, and cooked chicken into the bottom of your Instant Pot.
- Seal lid and turn valve to SEALING. Set MANUAL and set timer to 7 minutes.
- Once time is up, turn the knob to VENTING to let the pressure out (a quick release).
- While the pressure is being released, steam your broccoli in the microwave for 4-5 minutes or on the stove top (or follow directions on the frozen broccoli package if using frozen).
- Stir in the broccoli and cheddar cheese.
- Add salt and pepper to taste.
- Dish onto plates or bowls and top with more shredded cheese, if desired.
