ALLSPICE SUBSTITUTE
This is one spice that I do not normally have on hand. Most of my recipes do not call for it, but sometimes you just need it. This is a recipe for a substitution that works great. Below are two measurements. The normal formula is equal amounts of all three, but if you like the cloves and nutmeg less predominant, use the lesser amount. Both will have the flavor of allspice. See note at the bottom.

- Mix together; you want equal amounts of the spices above or see note.
- Use according to your recipe.
- NOTE: If you like a lesser amount of cloves and nutmeg, the formula is 1/2 teaspoon cinnamon, 1/4 teaspoon cloves, 1/4 teaspoon nutmeg.

Steps:
- Heat a heavy skillet over low heat for 2 to 3 minutes. Toast the allspice berries until fragrant, about 1 minute, then roughly crush.
- Combine the rum and crushed allspice berries in a quart-sized glass jar, seal the lid tightly and give it a good shake. Steep for 10 days.
- Strain the allspice-infused rum through a fine-mesh sieve into a small saucepan and add the sugar. Heat over low, stirring occasionally, until the sugar is fully dissolved, about 15 minutes. Cool to room temperature before storing in a glass jar or bottle.

- Allspice Substitute: Nutmeg. Nutmeg is another great warming spice, but like cloves, it lacks the same peppery kick of allspice. Start with ¼ teaspoon ground nutmeg for every ½ teaspoon ground allspice and keep tasting until it’s just right.
- Allspice Substitute: Cinnamon. You likely have this one in your pantry! Use an equal amount of ground cinnamon in place of ground allspice or add a cinnamon stick to a recipe that calls for whole allspice berries.
- Allspice Substitute: Pumpkin Pie Spice + Pepper. Pumpkin pie spice usually contains allspice in combination with other warming spices like cinnamon, ginger, nutmeg, and cloves.
- Allspice Substitute: Five-Spice Powder. The warm, spicy-sweet flavor of allspice is very similar to that of five-spice powder, a blend of cinnamon, star anise, fennel, cloves, and ginger or pepper.
- Allspice Substitute: DIY Spice Blend. While allspice is a spice on its own, not a blend, it’s very easy to create a similar-tasting mixture with spices you already have in your kitchen.
