SUGAR COOKIES

This sugar cookie dates back to a Swedish woman born in 1877! Her daughter, Esther Davis, shared the recipe with me and she came up with all the exact measurements, since the original cookies were mixed by feel and taste. These are my favorite cookies and I hope they'll become yours as well. -Helen Wallis, Vancouver, Washington

Steps:

  • Preheat oven to 350°. Cream butter, shortening and sugar until light and fluffy, 5-7 minutes. Beat in egg and vanilla. In another bowl, whisk flour, baking powder and baking soda; gradually beat into creamed mixture., Shape into 1-in. balls. Roll in additional sugar. Place on greased baking sheets; flatten with a glass. Bake until set, 10-12 minutes. Remove to wire racks to cool.

Steps:

  • Beat sugars, margarine, vegetable oil and salt very well. Add eggs and dry ingredients.
  • Make into balls, roll in sugar and place 1 inch apart on ungreased cookie sheet.
  • Bake at 350 degrees F (175 degrees C) for 8 minutes. For holidays or special occasions, roll in colored sugar instead of white sugar.

SUGAR COATED MOLASSES COOKIES

There will come a point in this recipe where you think you can't possibly add any more flour. Your mixer, if it's a small one, may even become alarmingly warm. But push on and all your hard work will be rewarded with some of the tastiest and most comforting cookies I have come across. They're great for dipping in a cup of tea or just for snacking on. I particularly like to make them to give away at the holidays.

Steps:

  • In a large mixing bowl, cream the butter and sugar.
  • Beat in the molasses and eggs.
  • Separately, combine the dry ingredients, then slowly mix into the wet ingredients.
  • When blended and smooth, roll the dough into small balls, about 1 inch around.
  • Dip the tops in sugar and place on greased or non-stick baking sheets.
  • Bake at 350°F or 180°C for 10-12 minutes.
  • Cool on a wire rack, then store in a tightly covered container to keep the cookies soft.

Steps:

  • Preheat oven to 325*.
  • Combine orange juice and peel; set aside.
  • Cream butter and sugar. Beat in water and vanilla. Combine flour and salt and gradually add to creamed mixture. Stir in chocolate chips and walnuts.
  • Roll into 1 inch balls and place 1 inch apart on ungreased baking sheets. Bake for 12 to 15 minutes or until lightly browned. Remove to wire racks to cool.
  • Strain reserved oranje juice/peel mixture. Drop cookies quickly in juice, then roll in additional sugar. Let dry.
  • Store in an air tight container.
