CHRISTMAS SUGAR COOKIES

This is my all-time favorite Christmas sugar cookie recipe. The addition of sour cream makes them extra moist. To dress them up, I drizzle or dip the cookies in tinted white chocolate, then sprinkle them with crushed candy canes. —Lisa MacLean, Winslow, Arizona

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in egg. Beat in the sour cream, honey and vanilla. Combine the dry ingredients; gradually add to creamed mixture and mix well. Cover and chill for 2 hours or until easy to handle. , On a lightly floured surface, roll out dough to 1/8-in. thickness. Cut with floured 3-in. cookie cutters. Place 1 in. apart on ungreased baking sheets. , Bake at 325° for 8-10 minutes or until lightly browned. Remove to wire racks to cool. , In a microwave-safe bowl, melt white coating; stir until smooth. Stir in food coloring; drizzle over cookies.

Christmas Cutout Sugar Cookies image

Steps:

  • Preheat oven to 350 degrees F.
  • In a bowl, stir together flour and baking powder. In another bowl, beat butter with sugar until fluffy and light. Beat in eggs and vanilla. Stir in flour mixture, a third at a time to make a stiff dough. Divide dough into 4 pieces. Roll out a portion of cookie dough to 1/4 inch thick. Cut out shapes using cookie cutters. Place on lightly greased or nonstick cookie sheets. Bake until lightly golden, about 10 minute, rotating baking sheet halfway through cooking time. Cool completely on pans about 5 minutes, transfer to cooling racks and cool completely before decorating.
  • In a small bowl, mix sugar and water to form a thick, smooth icing. Stir in food coloring to reach desired shade. Drop icing onto cookies using a small teaspoon and smooth with the back of the spoon. Make additional bowls for additional colors.
  • Additional multi-colored sprinkles can be added on top of icing before it dries for more decorative cookies, if desired.

4 cups sifted all-purpose flour
2 teaspoons baking powder
1 1/2 cups sugar
2 eggs
3/4 cup butter (1 1/2 sticks)
2 teaspoons vanilla extract

1/2 cup confectioners¿ sugar
1 1/2 tablespoons water
3 to 4 drops food coloring, plus more as needed

Classic Christmas Sugar Cookie Cutouts image

Steps:

  • In large bowl, mix 1 1/2 cups powdered sugar, the butter, 1 teaspoon vanilla, almond extract and egg until well blended. Stir in flour, baking soda and cream of tartar. Cover and refrigerate at least 3 hours.
  • Heat oven to 375°F. Divide dough in half. On lightly floured surface, roll each half of dough 3/16 inch thick. Cut into assorted shapes with cookie cutters, or cut around patterns traced from storybook illustrations. If cookies are to be hung as decorations, make a hole in each 1/4 inch from top with end of plastic straw. Place on ungreased cookie sheet.
  • Bake 7 to 8 minutes or until light brown. Remove from cookie sheet to cooling rack. Cool completely, about 30 minutes.
  • In medium bowl, beat all frosting ingredients until smooth and spreadable. Tint with food color if desired. Frost and decorate cookies as desired with frosting and colored sugars.

  • Preheat oven to 375 degrees F (190 degrees C). In a small bowl, stir together flour, baking soda, and baking powder. Set aside.

Steps:

  • Beat the butter and sugar with an electric whisk for 4 mins until light and fluffy. Beat in the eggs, one at a time, then add the vanilla. Whisk in the cornflour and plain flour until the mixture comes together into a dough. Put the dough between two pieces of baking parchment, and roll out to a 6mm thickness using a rolling pin. Chill for 30 mins.
  • Heat the oven to 200C/180C fan/gas 6. Peel the top layer of parchment off the dough and stamp out circles using a 6cm round cutter (or the shape of your choice). Re-roll any offcuts and continue stamping out rounds until all the dough is used. Transfer the cookies to a second large baking sheet lined with baking parchment, spacing them 2cm apart (you may need two sheets). Bake for 7-10 mins. Leave to cool on the sheet for 15 mins, then transfer to a wire rack to cool completely. Will keep in an airtight container for one week.

These are basic cut-out cookies posted in responce to a request. Convection oven temp is included as well as conventional. I did not include the 3 hour chill time in the cook/prep times below, you may not need it if the dough isn't sticky and rolls out easily. The cook time is 7 minutes per batch.

Steps:

  • Cream butter and shortening together, add sugar, baking powder and a dash of salt.
  • Beat until combined, scraping bowl.
  • Add egg and vanilla.
  • Beat in as much of the flour as you can with the mixer.
  • Stir in remaining flour.
  • Cover and chill for 3 hours or until easy to handle.
  • On a lightly floured surface, roll half of the dough at a time to 1/8" thick.
  • Cut into shapes with a cookie cutter.
  • Place on an ungreased cookie sheet.
  • in a conventional oven bake at 375F 7-8 minutes or until edges are firm and bottoms are slightly browned.
  • Cool on a wire rack, or on waxed paper on the countertop.
  • Frost with icing when cooled.
  • For a convection oven, I have seen that you would bake them on 325F for 7-8 minutes.
  • If you take them out and let them sit on the pan for a minute, they will continue to cook.
  • I usually take mine out a bit early, when they look like they aren't quite done yet.
  • This lets them stay soft and chewy.
  • Another tip is to drop the pan flat onto the counter after removing from the oven, this helps to spread them out so they aren't so puffed up.
  • For the icing, just mix the 3 ingredients together until it is a good spreading consistency, adding extra milk 1 teaspoon at a time.
  • Add a drop of food coloring.
