VANILLA PUDDING POPS
Make these ahead and you'll have an after-school treat for two kids for a whole week.

Steps:
- Place a fine-mesh sieve over a medium bowl; set aside. In a medium saucepan, off heat, whisk together sugar, cornstarch, and salt. Gradually whisk in milk, mixing until ingredients are dissolved. Whisk in egg yolks.
- Whisking constantly, cook over medium heat until the first large bubble sputters. Reduce heat to low; continue to whisk, and cook 1 minute. Remove from heat, and immediately pour through sieve into bowl; stir in vanilla.
- Divide mixture among 10 3-ounce ice-pop molds. Chill in refrigerator until cool and thickened, about 1 hour. Insert pop sticks, and freeze until solid, at least 4 hours and up to 2 weeks. Run molds briefly under warm water to release pops.

HOMEMADE SUGAR-FREE INSTANT VANILLA PUDDING
This nifty little recipe will allow you to make your own home-made instant pudding! It relies on instant clear jel, which will set cold liquids. (Clear Jel and INSTANT Clear Jel are not the same thing - make sure you get the instant!) It's a modified corn starch, and gluten-free. You can also produce the powder in bulk (48 pkts of Equal, 2 c clear jel, 2 T vanilla powder, 1/2 t salt), and mix 3/4 c of that with 2 cups of milk. Adapted from http://bit.ly/10Aiaui

Steps:
- Combine sweetener, clear jel, vanilla powder and salt in a blender. Run on high about 30 seconds to combine and grind the sugar to powder.
- Add milk and blend on medium until smooth. Portion into 1/2 cup servings. Place a square of plastic wrap on the surface of each portion, then refrigerate at least 30 minutes before serving.

- Combine all ingredients in a small saucepan. Stirring often, heat the mixture over medium-low heat until the chocolate chips melt, about 5 minutes.

- In a small bowl, whisk together the sweetener, cornstarch, and salt. Add it to a small saucepan and gently whisk in the milk until combined.
- Place the saucepan over medium heat and bring it to a boil. Continue to whisk and let it boil for 1-2 minutes, before reducing the heat to low. Gently scoop out half a cup of the mixure and add it to a bowl with the whisked egg yolks. Whisk very well, until combined. Add the egg yolk mixture into the hot mixture in the saucepan. Simmer for another 3 minutes, before removing from the heat.
- Gently whisk in the butter and the vanilla extract until combined. Distribute the pudding mixture amongst 8 small ramekins or serving dishes. Refrigerate the pudding for at least an hour, to firm up.
