Steps:

  • Dissolve 300g caster sugar in 150ml water over a low heat.
  • Leave to cool and bottle for future use in cocktails. Store in the fridge.

Steps:

  • Bring water and sugar to a boil and boil until sugar is dissolved. Cool to room temperature and transfer to a jar. Store in a cool pantry or refrigerate.

Steps:

  • In a stainless steel saucepan, combine sugar and water. Bring to a boil over medium high heat, stirring until sugar is dissolved. Reduce heat to low and keep waarm until needed, taking care not to boil the syrup down.

Marbled Chocolate Shard Garnish for Cocktails - Pete Evans image

Steps:

  • Melt the dark chocolate and white chocolate in separate bowls.
  • Line 2 baking trays with baking paper.
  • Drizzle over the dark chocolate, then drizzle over the white chocolate.
  • Using a spatula, spread the chocolate to 1mm thick creating a marbled effect.
  • Cool slightly, then score into large squares.
  • Refrigerate to set.

White Chocolate Mocha Syrup Recipe image

Steps:

  • Mix (with a wire whisk in a deep pan) milks, sugar, & vanilla over medium heat until lightly simmering.
  • Add white chocolate & continue whisking until chocolate is melted.
  • Add espresso powder & keep whisking to mix thoroughly.
  • Remove from heat to cool, whisking every few minutes to keep chocolate together.
  • Pour cooled syrup into bottles and refrigerate. You may need to let it get to room temp at the end of the bottle.

600 ml sweetened condensed milk
14 ounces evaporated milk
3/4 cup sugar
1 tablespoon vanilla
1 teaspoon instant espresso
6 ounces white chocolate, cut up in small pieces
