CLAM CHOWDER WITH ARTICHOKES

Looking for a quick dinner idea? Two easy steps and 15 minutes is all that it takes to make this delicious clam and artichoke chowder recipe using Progresso™ artichoke hearts, and sliced mushrooms.

Clam Chowder with Artichokes image

Steps:

  • Drain and quarter artichokes. Drain mushrooms.
  • In 3-quart saucepan, mix all ingredients except salt and pepper. Cook over medium heat, stirring occasionally, until thoroughly heated. Stir in salt and pepper to taste.

ARTICHOKE CHOWDER

Artichokes are not a favorite of many, but if you love them, as I do, you're willing try them in any way they're prepared. Make sure you use artichokes that have NOT been marinated!

Steps:

  • In a large saucepan, heat the oil and saute' the onions. Add the mushrooms, chopped artichokes, and broth. Cook about 6 - 8 minutes, until tender. Add the peas.
  • Blend the flour with the evap'd milk, and add to the sautee'd vegetable mixture in the saucepan. Cook for 5 - 7 minutes, until slightly thickened.
  • Season to-taste with salt and pepper.

8 ounce(s) canned artichokes, non-marinated, drained and chopped
2 cup(s) low sodium chicken broth
1/2 cup(s) frozen peas

- salt and pepper, to taste

Garlic Sauteed Artichokes image

Steps:

  • Rinse artichokes under cold water, and use a sharp knife to cut the top 1/3 off of each one. Trim the stems to about 1 inch, and remove the smaller leaves from around the base. Use scissors to remove any remaining leaf tips. Cut each artichoke in half from the bottom to the top, then use a spoon to scrape out the hairy choke. Rinse again to remove any residual hairs.
  • Melt the butter in a large skillet over medium heat. Add the garlic, and saute for about 1 minute to flavor the butter. Arrange artichoke halves cut-side down in the skillet. Saute for about 5 or 10 minutes, or until lightly browned. Reduce heat to low, and pour in about 1/4 cup of water, cover, and let steam for 15 to 20 minutes, or until the artichokes are tender. A fork should easily pierce the stem.

Steps:

  • Melt the butter and olive together in a large, heavy pot.
  • Add the chopped onion and garlic and sauté until onion is transparent, about 5 minutes.
  • Add the lemon juice and simmer until the liquid has been evaporated.
  • Add the clam juice or broth, heavy cream, diced artichokes, and the scallops, and simmer for 4 minutes (do not let boil!).
  • Season with salt, white pepper, cayenne, and nutmeg to taste, then ladle the chowder into 6 serving bowls.
  • Garnish with the minced chives and serve immediately.

Steps:

  • In a skillet, saute the artichoke hearts garlic, and shallots in the stock.
  • Set aside half the hearts and puree the rest in blender.
  • Add the butter and milk and whip till smooth.
  • Place in a saucepan and simmer over low heat for 20 mins.
  • Season with salt and pepper.
  • Fold in rest of the hearts and heat thoroughly.
  • Garnish with basil and croutons.
