Steps:

  • *Note-if you do not want to work with a live lobster, substitute two frozen, in-shell, 12 ounce tails, thawed and split in half lengthwise.
  • Heat the broth, clam juice, and saffron in a saucepan until steaming but not simmering; decrease heat to very low, cover, and keep warm without boiling.
  • Position oven rack in the center of the oven; preheat oven to 375°.
  • Heat a 14-inch paella pan over medium heat; swirl in the olive oil, then add the onion; cook, stirring frequently, for 4 minutes, until translucent.
  • Add in the garlic; cook for 30 seconds.
  • Stir in the tomatoes; keep cooking, stirring frequently, until they begin to break down, about 3 minutes.
  • Add in the wine; bring to a simmer, scraping up any browned bits in the pan.
  • Increase heat and simmer until reduced by half, about 5 minutes.
  • Stir in the oregano, thyme, salt, and pepper.
  • Then stir in the rice and the warmed broth; bring to a simmer; decrease heat to medium, and simmer for 10 minutes.
  • Meanwhile, set the lobster on a lipped cutting board to catch any internal juices; plunge the tip of a sharp knife into its head about ½ inch behind its eye stalks, thereby piercing the brain and instantly killing it; slice the lobster in half lengthwise.
  • Stir the green beans into the simmering rice, then set the mussels around the perimeter of the pan, partially submerging them.
  • Arrange the scallops in the pan in a circle inside the mussels, partially submerging them as well; and then lay the lobster halves in the center of the pan cut side down.
  • Place in the oven; bake for 15 minutes, or until most of the liquid has been absorbed and the rice is fairly tender.
  • Transfer to a wire rack, cover tightly with foil, and set aside for 10 minutes.
  • If desired, remove the lobster meat from the shell and place on top of the paella before serving.

Steps:

  • In a medium saucepan, heat the chicken stock until boiling.

  • Stir in the rice, tomatoes and tomato paste until well mixed and cook for 5 minutes. Add the boiling chicken stock little by little, stirring each addition constantly until the stock is almost absorbed.

  • Decorate with the chopped parsley and lemon wedges.

Steps:

  • Bring an 8- to 10-quart pot of water to a boil, then plunge 2 lobsters headfirst into water and boil, covered, 6 minutes from time they enter water. Transfer with tongs to a shallow baking pan to cool, then boil remaining 2 lobsters.
  • When lobsters are cool enough to handle, twist off tails, claws, and knuckles and remove meat, discarding bodies and shells. Cut tail meat crosswise into 1-inch-thick slices. Put lobster meat in a large bowl.
  • Bring wine, water, and 1/2 teaspoon salt to a simmer in a wide heavy medium pot. Add scallops and poach at a bare simmer, uncovered, until scallops are just cooked through (opaque), 3 to 4 minutes. Transfer with a slotted spoon to bowl with lobster.
  • Return liquid to a simmer over medium-high heat. Add mussels and cook, covered, stirring occasionally, until mussels just open wide, checking frequently after 4 minutes and transferring to bowl with seafood. (Discard any mussels that remain unopened after 6 minutes.)
  • Strain cooking liquid through a sieve lined with a dampened paper towel. Rinse pot, then return liquid to pot and boil until reduced to 1 cup, about 8 minutes.
  • Heat oil, garlic, vinegar, 1/2 cup reduced seafood liquid, and 1/2 teaspoon salt in a 1 1/2- to 2-quart nonreactive saucepan over medium-low heat, stirring occasionally, until warm, about 2 minutes. Add tomatoes and cook until they just begin to wilt but still hold their shape, 3 to 5 minutes.
  • Pour hot vinaigrette over seafood and stir gently to coat. Marinate, covered and chilled, at least 2 hours. Bring to room temperature, about 30 minutes, before serving.

4 (1 1/2-pound) live lobsters
1/2 cup dry white wine
2 1/2 cups water
1 1/2 pounds sea scallops, tough ligament removed from side of each if attached and scallops halved horizontally if large
2 pound cultivated mussels, scrubbed well and beards removed
2/3 cup extra-virgin olive oil
3 garlic cloves, finely chopped
5 tablespoons white-wine vinegar
1 pound grape tomatoes, halved

Steps:

  • Prepare a hot fire in a charcoal grill. Let burn down to red-hot coals; rake to edge of grill. (For backup, start a second round of coals in a charcoal chimney on pavement nearby.) Put a 16"-18" paella pan on grill grate; heat 1/2 cup olive oil. Add 3/4 lb. Spanish chorizo, sliced into 1/2"-thick rounds, and 6 stalks green garlic, thinly sliced, or 2 finely chopped leeks, white and light-green parts only; cook until golden, 3-4 minutes.
  • Add 1 tablespoon smoked paprika and 2 1/2 cups short-grain rice (such as bomba, Valencia, or calasparra); cook, stirring often, until rice is coated, 2 minutes. Add 1/4 teaspoon saffron threads to 7 cups hot seafood or chicken stock. Add stock to pan and season to taste with kosher salt; stir to distribute ingredients. Let cook, undisturbed, until stock simmers and rice begins to absorb liquid, about 10 minutes. Rotate pan every 2-3 minutes to cook evenly.
  • Arrange 3 1-1 1/4-pound lobsters, halved lengthwise, claws cracked, over the rice. Continue cooking, rotating the pan often, as the rice swells and absorbs the stock. Add more coals from charcoal chimney to maintain even heat under the pan. Cook until the rice is almost tender and the lobster is cooked through, about 10 more minutes.
  • Scatter 2 cups shelled peas or frozen peas, thawed, on top. (If the liquid evaporates before the rice is tender, add more hot stock.) Cook without stirring, allowing rice to absorb all of the liquid, so that a crust (the socarrat) develops on the bottom and the edges begin to dry out and get crusty, 5-10 minutes, for a total cooking time of about 40 minutes.
  • Remove pan from grill. Cover with large clean kitchen towels and let rest for 5 minutes. Garnish with 1/2 cup finely chopped fresh flat-leaf parsley and serve with 3 halved lemons, making sure to scrape some of the socarrat from the bottom of the pan onto each plate.

1/2 cup olive oil
3/4 pound Spanish chorizo, sliced into 1/2"-thick rounds
6 stalks green garlic, thinly sliced, or 2 finely chopped leeks, white and light-green parts only
1 tablespoon smoked paprika
2 1/2 cups short-grain rice (such as bomba, Valencia, or calasparra)
1/4 teaspoon saffron threads
7 cups hot seafood or chicken stock
1 1/2 teaspoon kosher salt
3 1-1 1/4-pound lobsters, halved lengthwise, claws cracked
2 cups shelled peas or frozen peas
1/2 cup finely chopped fresh flat-leaf parsley
3 halved lemons
Ingredient Info: Spanish chorizo; smoked paprika; saffron; and bomba, Valencia, or calasparra rice-as well as paella-making equipment-can be ordered from latienda.com.

  • Cook the lobsters. Bring a large pot of salted water to a rolling boil over high heat. Leave at least two inches from the top to avoid boiling over. Add each lobster to the boiling water head first. Optional: You can freeze the lobsters for 10 to 15 minutes before boiling to limit the amount of kicking. Cover the pot and return to a boil. Stir the lobsters halfway through cooking. Cooking times will vary depending on size, about 10 minutes for 1.25-pound lobsters to 15 minutes for 2-pounders. Save 1 cup of water from the pan for the seafood paella.
  • Prep the lobster meat. Let the lobsters cool until able to handle. Remove the meat from the tail, claws, knuckles, and legs. Give the claw and tail meat a rough chop or leave some whole for presentation on the finished dish.
  • Sauté the veggies. Heat the oil over high heat in a large deep-sided, heavy bottom pan or a dutch oven. When the oil shimmers add the onion and celery. Season with salt and pepper, cooking about 2 to 3 minutes until translucent. Reduce the heat to medium-high and add the garlic, continuing to cook for about 1 minute. Remove the veggies from the pan, leave any leftover oil in the pan
