STRAWBERRY SUMMER SALAD
I stopped at a deli and ordered a meal that came with this salad. The salad was so different that I didn't even want to try it. I did try it and loved it! I created my own version at home. Everyone loves it! You can use spinach leaves entirely if you prefer, or mix in any kind of greens you like.

Steps:
- Make a dressing by whisking together the mayonnaise, sugar, and vinegar in a small bowl. Stir in the poppy seeds; set aside.
- Toss together the lettuce, spinach, and onion in a large bowl. Drizzle the dressing over the salad and toss to coat. Add the strawberries and lightly toss again. Serve immediately.

SUMMER STRAWBERRY SALAD
I was asked to take a salad to a backyard get-together and didn't want to just take the same old thing, so I came up with this recipe, which combines features of several different salads I've had in the past. Look for my recipes for balsamic vinaigrette and creamy orange soy dressings on this site. Both are excellent with this salad.

- Preheat oven to 350 degrees F (175 degrees C). Spread walnuts on a baking sheet.
- Toast in preheated oven until walnuts start to turn golden brown and become fragrant, 5 to 7 minutes. Let cool, about 5 minutes.
- Toss toasted walnuts, strawberries, iceberg salad, baby spinach, feta cheese, red onion, and black pepper together in a large bowl.

I love strawberry's. This recipe has all the best. I add candied walnuts, and homemade strawberry vinaigrette dressing. This salad is great for any occasion. My family loves it!! It is super easy and cam be made in just minutes. I also like serving this at brunches, because it is so beautiful. Enjoy!!

- 1. For the salad, add your fresh greens to your salad bowl. You can make this as one big salad or individual ones. I roughly chop the strawberry's and add to the greens. Sprinkle with blue cheese.
- 2. For the candied walnuts, place the brown sugar in a sauté pan, slowly melt the sugar and add water. Once sugar melted add the walnuts (you can also use almonds) and sauté for a minute or so. Then remove from heat. Top your salad with these. FYI, if they sit they will harden.
- 3. For the strawberry vinaigrette, add all ingredients to the blender and blend until smooth. Pour desired amount over salad and toss.

- Combine chopped romaine lettuce and red lettuce.
- Add sliced strawberries, shredded cheese, and chopped walnuts.
- Mix dressing ingredients.
- Pour dressing over salad right before serving.
- This makes A LOT of dressing, so you might let guests pour their own.
- Of course, you can improvise.
- I have used raspberries and almonds.
- Use whatever is in season!

BEST EVER SUMMER STRAWBERRY SPINACH SALAD
This is a very simple and delicious salad to make, especially in the summer. My family does not like spinach very much, but they love this dish. Also great to take to pot luck or church dinners as it is a "different" salad. The secret is to find the pale green fresh baby spinach leaves as opposed to the larger, tough, dark green ones in a bag! Hope you enjoy it as much as we do!

- DRESSING:.
- Beat together egg and vinegar Put in a small pot and simmer, stirring well.
- Continue to simmer, add sugar and onion and cook for 5 minutes.
- Stir occasionally.
- Chill in fridge for 1 hour.
- Wash and drain baby spinach leaves and romaine lettuce well.
- Place in large salad bowl.
- Pour chilled dressing over salad and add strawberries or mandarines on top.
- Mix well.
- Prep time does not include refrigeration.
- If you are low carbing -- use Splenda in place of sugar, and strawberries, no oranges.
