SUMMERTIME CUCUMBER AND COTTAGE CHEESE SALAD
My grandmother used to make this healthy summertime salad to help use up extra cukes from the garden. My husband works outside and loves coming home to this during the heat of the summer. The cottage cheese and mayo can be subbed with low fat for a healthier version.

SUMMERTIME COTTAGE CHEESE SALAD
Fresh cottage cheese salad. Utilize the veggies from your garden. I'm not sure when I started making this salad. My grandma came up with it years ago, and I've made some simple changes to make it my own. **I've never had this salad on a bun, but my fellow Zaarites have taken gorgeous pictures in that form. I think I'll try it on a toasted onion bagel!

THREADGILL'S COTTAGE CHEESE CUCUMBER SALAD
This refreshing salad from Threadgill's brings back fond memories of iced tea, live music, fried catfish, and other delights from the Austin, TX restaurant. The dish can be served as a side salad, or, for a low-calorie lunch, serve on a bed of lettuce with some tomato wedges sprinkled with salt & pepper. I clipped the recipe from the Austin American Statesman many years ago. The original called for fresh parsley, but I like it with the dill.

Steps:
- Peel the cucumber and slice lengthwise into halves. Scrape out the seeds and discard, then chop the cucumber.
- In a medium bowl, mix together the cottage cheese, cucumber, dill, and green onion. Fresh dill is best, but if you must substitute, use only 1 tsp of dried.
- Sprinkle on some black pepper and 3 dashes of Tabasco, stir again, and taste. Add more pepper and Tabasco to your taste. If you wish, skip the Tabasco and let everybody add it to their own serving.
- Serve immediately.

- Gently—but thoroughly—toss tomatoes, cucumbers, scallion whites, 1 tsp. salt, and 4–5 good turns of pepper in a medium bowl to combine. Chill until ready to use, at least 30 minutes.
- Meanwhile, season radishes with ½ tsp. salt in a medium bowl, then toss with your hands to combine, squeezing the radishes until they get good and juicy. Add cottage cheese and 1 Tbsp. vinegar and stir to combine; season to taste with salt. Chill until ready to use.
- Spread cottage cheese vinaigrette on a platter. Pour off accumulated liquid from cucumber-tomato mixture. (Reserve the liquid if you like; it’s great over ice with or without a shot of vodka.) Add 2 Tbsp. oil and remaining 2 Tbsp. vinegar to salad and toss gently to combine.
- Spoon salad over vinaigrette, drizzle with oil, and garnish with scallion greens and a few turns of pepper.

- Wash and cut the tomatoes. Wash the cucumbers and seed if desired. Slice the cucumbers into small pieces or if using large cukes, slice long way, into fourths, so you have four long slices, then seed. Cut the cucumber into chunks. I like to leave the skin on for color.
- Using a medium size bowl, preferably clear, layer the tomatoes, cucumber and cottage cheese, as you would if making a yogurt parfait. Place in fridge until ready to serve.
