Steps:

  • Preheat oven to 400 degrees F.
  • Using a heavy hand, season rib-eye roast with salt and pepper on all sides. Heat olive oil in a large Dutch oven or a roasting pan. Place beef in hot pan and sear until deep golden brown on all sides. Transfer the pan to the oven and roast for about 15 minutes per pound for medium-rare, making an approximate hour of cooking time. Remove the pan from oven and transfer the beef to a cutting board. Allow meat to rest for at least 15 minutes, tented with foil, before carving.
  • Gravy:
  • Pour off excess fat from the Dutch oven (reserve for Thyme for Yorkshire Pudding, if desired) and place on the stovetop over medium heat. Add shallots and cook until soft and brown, about 4 to 6 minutes. Deglaze the pot with 1/2 cup of the wine, scraping up browned bits from the bottom. Add remaining wine, bring to a boil and reduce by half. Add stock and simmer until reduced again by about half. Pass the gravy through a fine mesh sieve and return to the pan. Bring back to a boil, then lower the heat and simmer until desired gravy consistency is reached. Taste for seasoning and adjust, if necessary. Carve beef against the grain, into thin slices, and serve with gravy.

1 (3 to 4-pound) bone-in rib-eye roast
Kosher salt and freshly ground black pepper
1/4 cup olive oil
1 large shallot, finely chopped
1/2 bottle drinking red wine, such as Malbec
5 cups beef stock

ROAST BEEF AND GRAVY

Steps:

  • 1. Set your oven to 350 degrees. Place your rump roast in a large pan such as a lasagna pan. Do not season at all. Place on the middle rack. You might have to remove the top rack. roast for 1 hour and 10 minutes. If you like your roast rare. If you like medium well then roast a little longer such as 10 minutes more.
  • 2. Take out roast and let it rest for 15 minutes. Then slice aganist the grain very thin slices if you like your meat sliced thin. Now you season your meat with salt, black pepper and galic powder.
  • 3. Make a gravy with the pan drippings add a cup of water to the pan heat on the stove add Gold Medal Wondra Flour sprinkled little by little into the drippings use a wire wisk. Stir good with the wisk to get up all the bits from the pan. All the flavor is in these bits and pieces. Season with salt pepper and garlic powder. When your drippings are a gravy consistency cook for a little while longer over a low flame(simmer) you may add sauteed mushrooms and onion to the gravey and cook a bit longer. If your gravy is too light add a little Kitchen Bouquet about a half teaspoon and stir well. Serve over your roast beef. Note: if you do not have enough pan drippings I use some beef consomee broth added to the drippings to increase to at least 2 cups gravy. Enjoy
  • 4. I have another recipee for homemade gravy will post later tonight it is a little more complicated and i find that making gravy with the Wondra flour ensures a smooth gravy (no lumps)

2 1/2 lb or three pound rump roast
1 tsp salt
1/2 tsp black pepper
2 tsp garlic powder

Steps:

  • Prepare the Roast: Adjust the rack to the bottom of the oven and heat to 425 degrees F. Blot any excess moisture from the roast, rub the Worcestershire sauce over the entire roast, and allow to marinate for 30 minutes, turning it twice.
  • Combine the powdered garlic, onion powder, paprika, and 1 tablespoon coarse-ground pepper in a small bowl; sprinkle the seasoning mixture evenly over the roast, pressing it, and let the roast stand for 20 to 30 minutes. Rub the meat with 2 teaspoons salt, place fat side up in a shallow roasting pan, and roast for 15 minutes.
  • Reduce oven temperature to 325 degrees F and continue to roast until the meat's internal temperature reaches 130 degrees F -- about 2 hours. Let the roast stand for 20 minutes before slicing.
  • Prepare the Gravy: Skim any fat from the liquid that remains in the roasting pan. Whisk the flour and 1/2 cup water together to a paste; set aside.
  • Scrape the drippings from the bottom of the roasting pan, add the beef broth, and stir over medium heat until the mixture begins to simmer. While continuously whisking, add the flour paste and bring to a boil.
  • Reduce heat to medium-low and let simmer for 4 to 5 minutes. If needed, add a little water to thin the gravy. Add remaining salt and pepper; serve warm. (I thought the gravy was a little to thin and I didn't add the extra salt or pepper.).

1 (4 -5 lb) boneless bottom round roast or 1 (4 -5 lb) rump roast
2 tablespoons Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 tablespoon fresh coarse ground black pepper, plus
1/4 teaspoon fresh coarse ground black pepper (I only had fine pepper and used 3/4 tablespoon)
2 1/2 teaspoons coarse salt (I used 2 teaspoons Kosher salt)
3 tablespoons all-purpose flour
2 cups beef broth

Steps:

  • Preheat the oven to 275 degrees F.
  • Season the meat on all sides with the Essence, salt, and pepper. Heat the oil in a large Dutch oven and brown on all sides, about 4 minutes per side. Remove the roast from the pan and add the onion slices and thyme sprigs. Place the roast on top of the onions, fat side up. Add the beef broth to the pan and place in the oven, uncovered. Roast until the beef is tender and registers an internal temperature of 130 to 135 degrees F, about 1 1/2 to 2 hours.
  • Transfer the roast to a platter or cutting board and let rest for 15 minutes before carving.
  • Meanwhile, use a slotted spoon to discard the onions and thyme sprigs. Place the Dutch oven over medium-high heat to heat the beef drippings. Combine the cornstarch and water in a small bowl until dissolved. Add the cornstarch mixture to the beef drippings and bring to a boil. Cook, stirring constantly, until slightly thickened, 2 to 3 minutes. Remove from the heat and carefully transfer to a gravy boat or decorative bowl.
  • Carve the beef thinly and arrange the slices on large plates with rice on the side. Drizzle gravy over each portion and serve alongside of the Easy Rice.
  • Combine all ingredients thoroughly.

Steps:

  • Heat oven to 160C/140C fan/gas 3. Rub the meat with 1 tsp of the oil and plenty of seasoning. Heat a large flameproof casserole dish and brown the meat all over for about 10 mins. Meanwhile, add 2 tsp oil to a frying pan and fry the carrots and celery for 10 mins until turning golden.
  • Lift the beef onto a plate, splash the wine into the hot casserole and boil for 2 mins. Pour in the stock, return the beef, then tuck in the carrots, celery and bay leaves, trying not to submerge the carrots too much. Cover and cook in the oven for 2 hrs. (I like to turn the beef halfway through cooking.)
  • Meanwhile, thinly slice the onions. Heat 1 tbsp oil in a pan and stir in the onions, thyme and some seasoning. Cover and cook gently for 20 mins until the onions are softened but not coloured. Remove the lid, turn up the heat, add the butter and sugar, then let the onions caramelise to a dark golden brown, stirring often. Remove the thyme sprigs, then set aside.
  • When the beef is ready, it will be tender and easy to pull apart at the edges. Remove it from the casserole and snip off the strings. Reheat the onion pan, stir in the flour and cook for 1 min. Whisk the floury onions into the beefy juices in the casserole, to make a thick onion gravy. Taste for seasoning. Add the beef and carrots back to the casserole, or slice the beef and bring to the table on a platter, with the carrots to the side and the gravy spooned over.

Steps:

  • Leave the string on the meat; rinse the roast. Using paper towels, blot any excess moisture from the roast; set aside.
  • In a heavy plastic 'zip-lock' bag add the first nine (9) ingredients; blend well. Add the roast and generously coat. Allow to marinate in the refrigerator for at least a couple of hours (preferably overnight).
  • Place the carrots, celery, onions, and bay leaves in a shallow roasting pan. Drizzle beef broth over vegetables; set aside.
  • Remove roast from plastic bag and set down on a cutting board. Using a sharp knife, make a 2-inch deep slit into the roast and insert a garlic quarter into the meat. Repeat in various places on the roast until done.
  • Sprinkle the rosemary, thyme, onion powder, pepper and salt evenly over the roast, including the underside; pressing it. Let the roast sit for about 1/2 an hour.
  • Position oven rack on the lowest level; preheat the oven to 425 degrees F.
  • Place roast fat side up in the prepared roasting pan; roast for 15 minutes. Reduce the oven temperature to 325 degrees F and continue roasting for approximately 2 hours (meat's internal temperature should reach 130 degrees F).
  • Transfer the cooked roast to a plate and cover with foil paper; let stand for 15 minutes. Meanwhile, remove the vegetables and cut the celery and carrots into 2-inch long pieces; leave the onions as they are. Keep warm.
  • Strain the pan juices through a sieve, discard the debris. Skim any fat from the liquid. The liquid should measure 2 cups - If necessary, reduce the liquid or add in some water and adjust the flavor by adding in a little more beef broth. The pan juices can be served as is, "Au jus", or they can be turned into gravy. To make the gravy, combine the flour and water, stir into the pan juices; scrape the drippings from the bottom of the roasting pan. Bring to a boil, stirring constantly. Cook until thickened, adding additional water or beef broth as necessary.
  • When ready to carve, remove and discard the string and garlic cloves from the roast. Carve the roast on a slant, in 1/4-inch thick slices, starting from the smallest tip, going to the larger end. Lay the slices, in an overlapping manner, down the centre of the platter and then arrange the vegetables along the slices.
