SUNFLOWER SEED & HONEY WHEAT BREAD

Try it topped with honey butter!! Mmmm! *The recipe makes 3 loaves so try freezing the other 2 loaves after the first rise and then you'll have them available for whenever you want them!

Sunflower Seed & Honey Wheat Bread image

Steps:

  • 1. In a large bowl, dissolve yeast in warm water. Add the bread flour, oil, honey, salt and 4 cups of the whole wheat flour. Beat until smooth. Stir in the sunflower kernels and enough remaining flour to form a firm dough.
  • 2. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour.
  • 3. Punch dough down; divide into three portions. Shape into loaves; place in three greased 8x4 inch loaf pans. Cover and let rise until doubled, about 30 minutes.
  • 4. Bake at 350 degrees for 35-40 minutes or until golden brown. Remove from pans to wire racks to cool.

2 pkg active dry yeast (1/4oz each)
3 1/4 c warm water
1/4 c bread flour
1/3 c canola oil
1/3 c honey
3 tsp salt
6 1/2 + c whole wheat flour
1/2 c sunflower kernals

Steps:

  • Place all ingredients (except sunflower seeds) in the pan of the bread machine in the order recommended by the manufacturer. Select Basic White Cycle; press Start. Add the sunflower seeds when the alert sounds during the Knead Cycle.

Steps:

  • In a small bowl, dissolve the yeast and sugar in 1/2 cup warm water. In a large bowl, mix remaining 3 1/2 cups warm water, honey, molasses, oil, eggs and lemon juice. Mix well. Add yeast mixture and stir.
  • Gradually add 5 cups whole wheat flour beating well after each addition. Add the flax, cracked wheat and sunflower seeds, stir well.
  • Let stand for 20 minutes, until mixture is very light. Stir in salt and the rest of the flours until dough pulls away from the sides of the bowl.
  • Knead 10 to 15 minutes until dough is smooth and elastic. Put into a greased bowl and cover, let rise in the oven with light on until doubled, about 1 hour.
  • Punch down and shape into 6 round balls. Cover and let rest for 20 minutes.
  • Form into loaves and let rise covered in oven until doubled. Bake at 375 degrees F (190 degrees C) 25-35 minutes.

  • Dissolve the yeast and honey into the warm water and let it rest for five minutes to allow the yeast to activate.
  • While the yeast is activating, roughly chop the sunflower seeds with either a knife or a mini-food processor. Add the chopped sunflower seeds to a large bowl with one cup of the whole wheat flour and the salt. Stir until evenly combined.
  • By this point the yeast should be foamy and frothy in the water. Add the olive oil to the yeast water and then pour it all into the bowl with the flour and sunflower seeds. Stir until the mixture is fairly smooth.
  • Add the last half cup of whole wheat flour and stir until it is incorporated. Add a half cup of all-purpose flour and stir until it forms a loose, shaggy ball of dough.
