SUNSHINE MOUSSE PIE
This is a no-bake pie that is light, tart, and delicious, sort of an orange cream cheese mousse. It's great as a summer dessert topped with some whipped cream. At the end of the directions you'll find suggestions for other fruit variations. I found the recipe on a box of knox gelatin.

Steps:
- Pour the cold water into a blender and sprinkle with the gelatin.
- Let stand for 1 minute.
- Add the hot cream and process at low speed until gelatin is completely dissolved, about 2 minutes.
- Add the cream cheese, juice concentrate, sugar and vanilla; process until blended.
- Chill until mixture is slightly thickened, about 15 minutes.
- Pour into crust and chill until firm.
- Garnish with slices of orange, lime, or other fresh fruit.
- (If you take a slice of fruit and make a cut in it from the center to the outside, you can then twist it to make a pretty garnish.) NOTE: Instead of orange, you can make this with frozen lemonaide, limeaide, tangerine juice, frozen pina colada mix, strawberry concentrate, etc.
- If you do use a sweetened concentrate like lemonaide, cut the added confectioner's sugar in half.

CHOCOLATE MOUSSE PIE
I was surprised this recipe wasn't already posted. It's my oldest son's favorite and very simple to make! It's creamy and smooth and delicious!

Steps:
- For Crust: Mix together, graham cracker crumbs, butter, and sugar press in to 9" pan and bake at 350 for 8 minutes.
- Prepare crust and cool. In double boiler, over hot (not boiling) water, melt chocolate chips. Remove from heat and cool slightly. Or, use microwave on medium heat at 1 minute intervals. Stir often - remember, the chips will continue to melt when removed so don't over cook! Don't forget to cool this mixture or you will cook your eggs in the next step!
- Using a beater, beat in egg and egg yolks one at a time.
- In a small bowl, beat egg whites until soft peaks form. Fold this into the chocolate mixture.
- With a wire whisk, gently fold in 2 cups of Cool Whip into above mixture.
- Pour into cooled crust and chill until set, about an hour.

SUNSHINE ICE CREAM PIE
This brings back memories of creamsicles from the ice cream man. This make-ahead pie is delicious and always popular. Cook time is for freezing.

- Spoon alternate layers icecream and sherbet into crust.
- Freeze at least 3 hours or overnight.

DELICIOUS MANGO MOUSSE PIE

- Peal the mangos and separate the pulp. With a food processor or blender, make a puree with the pulp. You need 1 1/2 cup of mango puree. Put it aside.
- Using a fork, mix the water and the unflavored gelatin and let it settle a few minutes.
- Meanwhile, in a small saucepan, mix the yolks with the lemon juice and 1/4 cup of sugar. Stir constantly for about 4 minutes until it thickens and bubbles. It must not boil.
- Add the gelatin and stir 30 seconds more at medium heat. Place the mixture in a bowl and mix it with the mango puree and the ginger. Let it cool.
- Beat the egg whites with the salt until stiff. Add the remaining sugar (1/4 cup) and beat until it gets firm.
- Softly, mix the egg whites with the mango mixture.
- Fill the pie crust and refrigerate about 4 hours.

- BEAT cream cheese and 1/4 cup sweetened condensed milk in medium bowl until well blended. Whisk in 1/2 cup whipped topping. Spread mixture in graham crust.
- WHISK orange juice, remaining sweetened condensed milk and dry pudding mix in medium bowl 2 minutes. Stir in 1 1/2 cups of the remaining whipped topping. Spread over cream cheese layer.
- STIR grated orange peel into remaining whipped topping. Spread over top of pie. Refrigerate 4 hours before serving.
