For years I wondered why people raved about ribs. I didn't have the patience or energy to bother with them, until I made this recipe. Now I'm a believer, too.-Merle Dyck, Elkford, British Columbia

Sweet & Sour Pork Ribs image

Steps:

  • In a small saucepan, combine brown sugar and flour. Stir in the vinegar, water, soy sauce, ketchup and garlic. Bring to a boil; cook and stir for 2 minutes or until thickened., Place ribs in a 5-qt. slow cooker. Top with sauce. Cover and cook on low for 8-10 hours or until meat is tender. Skim fat. Serve ribs with sauce.

MOM'S 'SWEET 'N' SOURS' PORK RIBS

My Mom's longtime recipe that she learned from my grandmother who has long passed on. Combines soy sauce, sugar, vinegar, dry mustard, garlic, as well as a few other simple ingredients to make a delicious sauce for sweet and sour cut ribs. Great over rice! Some say rice and this sauce is their favorite food! A Lechner family tradition!

Mom's 'Sweet 'n' Sours' Pork Ribs image

Steps:

  • In a bowl, mix the sugar, flour, salt, pepper, and mustard. Stir in the water, soy sauce, and vinegar.
  • Place the ribs in a pot with enough water to cover. Bring to a boil, cook 10 minutes, and drain.
  • Heat the oil in a large skillet over medium heat, and brown the ribs on all sides. Mix in the sauce mixture. Bring to a boil, reduce heat to low, and simmer 30 minutes. Mix in the garlic, and continue cooking 15 minutes, or to desired doneness.

Steps:

  • Heat oil in a large wok over medium high heat and brown ribs-around 10 minutes.
  • Add the soy sauce and continue browning.
  • Add the vinegar and bring to a boil, reduce heat and simmer for 20 minutes.
  • Add brown sugar and simmer 10 minutes more.
  • You might need a bit more vinegar at this point.
  • You want the sauce thick but fluid.
  • Add the peppers and onions and cook for 5 minutes.
  • Add the ketchup and stir.
  • Taste and adjust the vinegar/brown sugar ratio.
  • If needed add cornstarch to thicken.

2 packages pork ribs, split individually
2 teaspoons vegetable oil
2 teaspoons soy sauce
1 cup white vinegar
1 cup brown sugar
1 green bell pepper, cut into chunks
1 red bell pepper, cut into chunks
1 large onion, cut into eighths

  • Place ribs on a rack in a large shallow roasting pan. Bake, uncovered, at 350° for 1-1/2 hours. , Meanwhile, in a small saucepan, combine the sugar, brown sugar, cornstarch, ketchup, vinegar and water until smooth. Bring to a boil. Cook and stir for 1-2 minutes or until thickened. Remove ribs and rack from pan. Drain and discard fat. Return ribs to roasting pan; drizzle 1-1/2 cups sauce over ribs. Bake 30 minutes longer.   • Before slicing the ribs into smaller pieces, check the bone side of the ribs and remove any membrane (or silverskin) that’s covering the bones (it’s a relatively thick white layer). The silverskin can turn leathery once cooked and it can prevent the marinade from penetrating the meat. Use your fingers to grab onto that membrane and rip it off.
  • Slice the strips of baby back ribs into small pieces by slicing in between each bone. Transfer the ribs to a medium mixing bowl.
  • In a small bowl, mix the sugar, salt, garlic powder, vinegar, soy sauce, and rice wine. Pour the marinade over the ribs and stir to coat the ribs with the marinade. Cover the bowl and let the ribs marinate for at least 2 hours (or overnight). Periodically, give the ribs a stir to ensure that all the pieces are evenly marinated.
  • To cook the ribs, heat the canola oil in a wok (or sauté pan with a lid) over high heat. Using tongs, transfer the pieces of ribs to the wok. Stir fry the ribs for about 1 minute.

  • Rinse pork ribs with running water and transfer to a large pot. Add water to cover the ribs. Add shaoxing wine, ginger, green onion, star anise and chili pepper to the pot. Cover and bring to a boil. Uncover and continue to cook for 5 minutes. Use a ladle to skim the foam from the surface and discard it.
  • Transfer the ribs to a colander to drain. Scoop ginger, green onion, star anise, and chili pepper from the broth and discard. You can save the broth and use it to make soup later (*see footnote 2).

  • Select meaty ribs, and have the butcher cut them into 1.5” to 2” long pieces. Rinse, and pat dry with a paper towel.
  • Preheat a wok until it starts to smoke lightly (see my post on how to prevent food from sticking to a wok). Add 2 tablespoons oil, along with the ginger slices. Over medium heat, fry the ginger for 1 minute. Add the ribs, turn up the heat to high, and take a few minutes to brown both sides.
  • Turn down the heat, and add in 1 tablespoon Shaoxing wine, 2 tablespoons light soy sauce, 3 tablespoons Chinese black vinegar, 4 tablespoons sugar, and 5 tablespoons water. Stir and mix everything well. Turn up the heat to bring it to a boil.
  • Once boiling, cover and reduce the heat to medium/low. Simmer for 25 minutes (20 minutes if the ribs are less meaty than mine). Halfway through the process, check to make sure the liquid is not drying up. If so, reduce the heat further and add in a little more water if needed.
