making your own teriyaki sauce is so simple and has such a fresh taste but what's really neat about it is that you can change the sauce to match the food. This would go well on just about anything. If you wanted you could use it on a piece of salmon, or you have a little more Brown sugar may be little honey. There are a lot of possibilities. This is one sauce that you really should taste instead of just measuring it the way it is in the recipe. You just may come up with something you like better. Source unknown

- with a sharp knife, cut the tips off the chicken wings and save them for stock. Slash The inside of the wing joint to help them cook more evenly, but don't cut them all the way through. Sprinkle liberally with the chicken wing dry rub. Set aside.
- To make the sauce, mix the soy sauce and brown sugar together in a medium microwave safe bowl. Add the oil, rice vinegar, garlic, ginger, and pepper. Mix well. Microwave on high for one minute. Stir, and microwave on high for another 30 seconds. Set aside.
- Prepare the grill for cooking over direct medium heat. Grill the wings for about 25 minutes, turning often. The wings are done when they are nicely browned and the juices run clear. Remove the wings to a platter. You may serve the wings whole but if you prefer to serve them in individual segments, cut them apart now. Transfer the wings to a bowl. Pour the sauce over the wings. Toss to coat well. To serve, transfer to a platter and top with scallions. Serves 10
- Chicken wing dry rub: 2 tablespoon salt 2 tablespoons sugar in the raw 2 tablespoons granulated garlic 2 tablespoons onion powder 2 tablespoons paprika 2 teaspoons good-quality chili powder 2 teaspoons finely ground black pepper 1 teaspoon lemon pepper 1 teaspoon ground cumin 1/4 teaspoon cayenne pepper mix together and store in an airtight container. Makes about 3/4 cup.

- Put oven rack in upper third of oven and preheat oven to 425°F.
- Line a large shallow baking pan with foil and lightly oil foil.
- Mince garlic and mash to a paste with salt using a large heavy knife.
- Transfer garlic paste to a large bowl and stir in soy sauce, hoisin, honey, oil and cayenne.
- Add wingettes to sauce, stirring to coat.
- Arrange wingettes in 1 layer in baking pan and roast, turning over once, until cooked through, about 35 minutes.
- Transfer wingettes to a large serving bowl and toss with sesame seeds and scallion.

- Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with aluminum foil.
- Whisk honey, sesame oil, soy sauce, ginger, and garlic together in a small bowl.
- Arrange chicken wings on prepared baking sheet.
- Bake chicken in the preheated oven for 45 minutes. Brush 1/2 of the honey mixture over the wings; bake for 10 minutes. Brush remaining sauce over wings, sprinkle sesame seeds over the top, and bake wings until no longer pink at the bone and juices run clear, about 5 minutes more. - Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking pan with cooking spray.
- Place frozen chicken wings, skin side-down, in the prepared pan.
- Combine soy sauce, water, and sugar in a bowl; pour sauce over chicken.

- In a large food storage bag, combine soy sauce, water, sugar, sesame oil, green onions, garlic, sesame seeds, and peppers.
- Add chicken wings; turn bag to coat well.
- Seal and refrigerate for at least 2 hours, or overnight, turning occasionally. I've often marinate them for 2 days for that extra flavor.
- Remove chicken to a shallow rack in baking dish or roasting pan.
- Discard the marinade.
- Bake wings, uncovered, at 350° for 30 minutes. Turn wings and bake 25 minutes longer, or until tender.
- At first I thought 55 minutes baking time would be too long, but they turn out tender and moist.
- These are not as high calorie as stated to the right because nearly all of the ingredients are discarded with the marinade.

- Combine honey, vinegar, paprika, salt and pepper in a small bowl., Cut through the 2 wing joints with a sharp knife, discarding wing tips.
