HOT CHOCOLATE PANCAKES
Leftover hot chocolate or cocoa mix gives a chocolaty kick to these pancakes, inside and on top. We fold it into the batter and simmer it with the maple syrup for decadent drizzling.

- For the hot chocolate syrup: Bring the maple syrup and hot chocolate mix to a simmer, whisking constantly, in a small saucepan over medium heat. Continue to simmer until the syrup is thick enough to coat the back of a spoon, about 5 minutes. Keep warm.
- For the pancakes: Preheat the oven to 200 degrees F. Whisk together the flour, hot chocolate mix, baking powder and 1/4 teaspoon salt in a large bowl. Whisk together the milk, butter, eggs and vanilla in a medium bowl. Pour the milk-egg mixture into the flour mixture, and gently fold just to combine (it's OK if there are some lumps).
- Heat a large nonstick skillet or griddle over medium heat. Add 1 tablespoon butter; when it melts and the foam subsides, pour 1/4-cupfuls of batter onto the skillet, evenly spaced. Cook until the surface of the pancakes begins to bubble and the bottoms have darkened by a few shades, about 4 minutes. Flip the pancakes, and continue to cook until the bottoms have darkened by a few shades and the pancakes are springy when touched in the center, about 3 minutes. Repeat with the remaining butter and batter. (Keep cooked pancakes warm in a low oven.) Serve with the hot chocolate syrup and whipped cream.
SUPREME COCOA MIX
I was in a search for a great cocoa mix that tasted very similar to the store bought kind. I tried a couple of recipes but they just weren't it. So, I combined a few of them together and came up with this! My family just thinks it is fabulous. You can substitute different flavors of pudding but we find Chocolate fudge works the best!

- Place all ingredients in large bowl.
- Stir together with a wire whisk.
- Place mix in a sifter and sift to make a really fine powder.
- This really make sure everything is really combined.
- Store in a sealed container.
- Add 1/2 cup of mix to an 8oz.
- mug and fill with hot water.
- Add more or less mix depending on your taste.
- Enjoy!

- In a large bowl, combine powdered milk, chocolate pudding mix, chocolate drink mix powder, creamer, confectioners' sugar, and cocoa. Divide the mixture between two 1 quart jars. Seal, and decorate as desired. These can be stored in a dry area for up to 3 months.
- Attach a tag with the following instructions: Hot Cocoa: Dissolve 1/3 cup cocoa mix in 1 cup boiling water.

HOT COCOA MIX
I never have understood why most hot cocoa mixes call for store-bought chocolate drink mix as an ingredient. That just doesn't make sense to me. This verson is easier, cheaper, and in my opinion tastes better. Prep time does not include blending. The cook time is the time it takes to heat the water and stir in the cocoa. I have no idea on the serving size, so I gave it a wild guess.

- Spread milk powder in a thin, even layer the prepared sheet pan and bake until golden brown and crumbly, about 20 minutes. Remove from oven and cool. Odds are good the milk powder will be stuck together in lumps and if that's the case, simply pulse it in a food processor a few times. (Toasting the milk powder is technically optional but personally, I think the flavor is worth it.)
