SWEET AND SPICY GRILLED CHICKEN

This simple recipe has become my family's favorite way to eat chicken. The blend of sweet and spicy is perfect. -Melissa Ball, Pearisburg, Virginia

Sweet and Spicy Grilled Chicken image

Steps:

  • Combine the first five ingredients; rub over chicken. Moisten a paper towel with cooking oil; using long-handled tongs, rub on grill rack to coat lightly., Grill chicken, covered, over medium heat or broil 4 in. from the heat for 4-5 minutes on each side or until a thermometer reads 165°.

Sweet and Sour Grilled Chicken image

Steps:

  • Combine brown sugar, oil, vinegar, mustard, lime juice, lemon juice, garlic, seasoned salt, and pepper in a medium bowl and mix well.
  • Place chicken in a glass or ceramic bowl and cover with sauce. Cover the bowl with plastic wrap and marinate in the refrigerator, 8 hours or overnight.
  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Remove chicken from the marinade and shake off excess. Discard the remaining marinade.
  • Cook chicken on the preheated grill until chicken is no longer pink in the center and the juices run clear, 8 to 10 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Steps:

  • Combine all ingredients except chicken in a 2 gallon zip loc bag and mix well.
  • Add chicken and seal bag.
  • Rub bag to evenly coat chicken pieces.
  • Refrigerate overnight, turning bag once or twice.
  • Keep refrigerated until prepared.
  • Grill or broil chicken until done.
  • Marinade is very sticky so line broiler pan with foil for easier cleanup.
  • Recipe can be halved but you can still use the whole can of guava nectar.

12 ounces concentrated frozen guava nectar
1 cup oyster sauce
1 cup sugar
1 cup catsup
1 cup soy sauce
1/2 teaspoon Chinese five spice powder
1 teaspoon salt

Sweet Guava Grilled Chicken image

Steps:

  • Mix lime juice, olive oil, cumin, salt, pepper and garlic together. Pour over chicken in a ziploc freezer bag. Force out the excess air and message to coat chicken pieces. Refrigerate for at least 3 hours, preferably overnight.
  • Discard marinade. Pat chicken dry with a paper towel. Season the chicken with additional salt, pepper and a little extra cumin.
  • Heat up the burners on a gas grill or light charcoal briquettes to preheat the grilling surface. Grill the chicken over medium heat using an indirect heating method to avoid flare-ups. Cook for approximately 30 minutes, turning occasionally until chicken begins to brown.
  • For the glaze, mix guava jelly, apple juice, lemon juice and brown sugar in a 1-quart saucepan and bring to a boil. Reduce heat to low and simmer, uncovered, stirring frequently until glaze thickens and reduces somewhat, about 5 to 10 minutes; remove from heat.
  • Brush chicken with glaze mixture frequently during the last 15 minutes of cooking. Once glazed, keep a close eye on the chicken because sugar burns easily and tastes terrible.

  • Combine guava, vinegar, garlic, onion, ancho and honey in a small saucepan and reduce to 1/2 cup. Place 2 skewers through each thigh and season with salt and pepper. Brush with glaze and grill 4 minutes per side. Brush with glaze several times while on grill. Cut each thigh in half and serve.

  • Melt guava jelly in medium microwavable bowl on HIGH 30 seconds or until melted. Add lime juice, black pepper and red pepper; mix well. Reserve 1/2 cup for glaze. Add garlic powder, oil and salt to remaining mixture in bowl. Pour into large resealable plastic bag. Prick chicken wings with fork. Add to marinade in bag; turn to coat well. Massage chicken wings and marinade for 4 to 5 minutes. Remove chicken wings from marinade. Thread chicken wings onto long double skewers. Discard any remaining marinade. Grill chicken wings over medium-high heat 15 to 18 minutes or until cooked through, turning occasionally. Place chicken wings in large bowl. Add reserved guava jelly mixture; toss to coat well.
