Steps:
- Combine flour, sugar and butter.
- Add eggs and stir till blended; add chocolate chips and walnuts.
- Pour into a 13x9 pan that has been sprayed with cooking spray such as Pam.

SWEET POTATO ORANGES
Adapted from AllRecipes: A beautiful and unique way to serve sweet potatoes - absolutely delicious, too! Note: It is easiest to remove the flesh of the oranges using your bare (clean) hands vs. a spoon! The filled oranges can be made a day ahead and brought to room temperature before adding streusel topping and heating. Be sure to cut the oranges so that they are fairly stable and will not roll over into the water when baking.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Prepare oranges by cutting tops off, 1/4 to 1/2 inch down. Spoon out the flesh, leaving a shell.
- In a large bowl combine sweet potatoes, sugar, orange juice, eggs, vanilla extract, 1/2 cup butter and grated orange peel. Spoon mixture into orange shells. Place in a deep casserole dish.
- In a small saucepan over medium heat, combine remaining 1/2 cup butter, brown sugar, flour and pecans. Cook until sugar dissolves in melted butter. Spoon over oranges. Fill casserole dish with water to reach 1/2 inch in depth.
- Bake in preheated oven for 30 minutes.

Traveling in ZWT, we find ourselves looking for exotic recipes but yet recipes we can make at home and will be eaten. This is the perfect recipe for a dessert for yourself, family, or special company. Simple to put together, minimal time frame, and it looks divine. Enjoy the sweetenss of oranges and cocoanut with a bit of a kick in the center. Adults preferred but sub in OJ if making for children Adopted from the Univ of Penn African recipe collection

Steps:
- Blend all together.
- Divide 1 cup MOIST SHREDDED COCONUT into 8 dessert sauce dishes (2 Tbs. or 1 oz. each).
- Make a hole in the center of the coconut so that it forms a rim.
- Fill centers with ORANGES CONGO, dividing above mixture evenly.
- Add more brandy or orange juice if the mixture is not moist enough.
- NOTE:.
- Set in the reridgerator to cool but this is not neccessary. Needed time for "cooking" in the recipe format here.
- OPTIONAL:If you need a dessert in a hurry, prepare this dessert with canned mandarin oranges.
- OPTIONAL: Another variation is to stuff baked apples with the above mixture when they are about half done.
