SWEET POTATO BAKED OATMEAL

A wonderful breakfast treat using oats and sweet potatoes!

Sweet Potato Baked Oatmeal image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x8-inch baking pan.
  • Mix rolled oats, brown sugar, baking powder, salt, cinnamon, and nutmeg together in a mixing bowl until ingredients are evenly distributed.
  • Mix mashed sweet potatoes, milk, eggs, and vegetable oil together in a separate bowl until well blended. Pour sweet potato mixture into oats mixture and mix well. Spread mixture evenly into prepared baking dish.
  • Bake in preheated oven until oatmeal has set and the top is golden brown, about 30 minutes.

Steps:

  • 1. In mixing bowl, stir together flour, sugar, baking powder and salt. Set aside.2. In large mixing bowl, combine KELLOGG'S CRACKLIN' OAT BRAN cereal and milk. Let stand 2 minutes or until cereal softens. Add egg and oil mix well. Add flour mixture, stirring only until combine. Portion batter evenly into twelve 2 1/2-inch muffin-pan cups coated with cooking spray.3. Bake at 400°F for 25 minutes or until lightly browned. Serve warm.

Baked Sweet Potatoes image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Coat the bottom of a glass or non-stick baking dish with olive oil, just enough to coat.
  • Wash and peel the sweet potatoes. Cut them into medium size pieces. Place the cut sweet potatoes in the baking dish and turn them so that they are coated with the olive oil. Sprinkle moderately with oregano, and salt and pepper (to taste).
  • Bake in a preheated 350 degrees F (175 degrees C) oven for 60 minutes or until soft.

Spread in 10 x 6 x 2-inch (1 1/2-quart) glass baking dish coated with cooking spray. Top with remaining marshmallows.2. Melt remaining 1 tablespoon margarine. Combine with KELLOGG'S CRACKLIN' OAT BRAN cereal, remaining 1 tablespoon brown sugar and cinnamon. Sprinkle over marshmallows.3. Bake at 350°F about 30 minutes or until thoroughly heated.

  • To roast your sweet potato, preheat oven to 400 degrees F (204 F) and cut sweet potato in half and lightly coat with olive oil. Place flesh side down on a foil lined baking sheet and bake for 20-25 minutes or until soft and tender. This will depend on your size of potato. (Alternatively, pierce a few times with a fork and microwave for 4-5 minutes until tender.)
  • Once done, pull potatoes out of the oven and start your oats (see notes for steel cut directions). Bring water to a boil in a small saucepan. Once boiling add your oats and reduce heat to medium. Continue cooking until the oats have absorbed most of the water - about 5 minutes - stirring frequently.
  • Once your oats are just about done cooking (~5 minute mark), stir in sweet potato puree, sweetener of choice, cinnamon and flax seed and stir to combine. Taste and adjust flavor/seasonings as desired. To thin, add a splash of non-dairy milk (such as almond).
