SWEET POTATO LYONNAISE
Lyonnaise potatoes are traditionally made with regular potatoes, but work just as well with sweet potatoes. If you have some on hand, try adding toasted chopped pecans or a dollop of Greek yogurt.

- Heat the oil in a large skillet or cast-iron pan over medium-high heat. Once the oil is hot, add the onions. Season with salt and pepper and cook the onions, stirring often, until softened and browned around the edges, about 5 minutes. Transfer the onions to a bowl.
- While the onions are cooking, peel and cut the sweet potatoes into 1/4-inch slices.
- Reduce the heat to medium and add the butter to the skillet, swirling to prevent burning. When the butter has melted, cover the bottom of the skillet with as many potato slices that will fit in one layer (this should be about half of the potatoes). Cook until the potatoes are deeply browned on one side, about 4 minutes. Remove to the bowl with the onions. Add the remaining potato slices, and then spread the cooked onions/potatoes over top. Season with salt and pepper, pour in the chicken broth and cover the skillet.
- When the potatoes are partly tender with some resistance, about 3 minutes, use a metal spatula to flip the bottom layer to the top and continue cooking. (Don't worry; it will take 3 to 4 flips to transfer all the browned potatoes to the top.) Cook until the potatoes are tender, about 2 more minutes. Remove the lid, raising the heat to medium-high and allow the remaining liquid to evaporate, about 3 minutes.

ROASTED SWEET POTATOES & ONIONS
This delicious side dish is packed with nutrition. SWEET & REGULAR POTATOES W/ONIONS
My father used to make this with leftover sweet and white potatoes. He would add sliced onions to the mix. And he would fry it all up with bacon grease. But use margarine or vegetable oil for a healthier version. He would season with salt and pepper to taste. But I also like to add crushed red pepper to spice things up some. Just a good use of leftovers. Plus the sweet potatoes would actually sweeten up more when they are fried. But remember not to use high heat. Or else they will burn. Slow and easy makes it delicious!

- Place cooking oil in pan.
- Slice onions into pan.
- Cook onions until translucent.
- Slice whole leftover sweet potatoes into pan.
- Slice whole leftover white potatoes into pan.
- Fry in oil until desired doneness.
- Depends on quantity.
- Season the way you like with anything.

MAPLE SWEET POTATO PUREE WITH CARAMELIZED ONIONS
Steps:
- Preheat oven to 375 degrees F.
- Place sweet potatoes, 1/4 cup of the maple syrup, 2 tablespoons of the olive oil, 2 teaspoons salt and 1 teaspoon pepper in a large mixing bowl. Toss to evenly coat and place on sheet tray. Roast in the preheated oven for 35 to 40 minutes or until sweet potatoes are soft. Be sure to check on them after 15 minutes and stir, if needed.
- Meanwhile, in a medium saucepan over medium-high heat, melt butter and add remaining 2 tablespoons of olive oil. Add the sliced onion, 2 tablespoons of maple syrup and season with salt and pepper, to taste. Saute until deep golden brown, about 2 minutes. Remove from the heat and set aside. Add water, 1 tablespoon at a time, if the pan becomes dry.
- Transfer sweet potato mixture to a food processor, (may need to be done in batches) and add about a tablespoon of hot water. Pulse until just blended and then add half the caramelized onions. Pulse just a few times until desired consistency, adding more hot water for a smoother puree. Fold in remaining caramelized onions, reserving some for garnish.
- Serve in a warm dish and garnish with the reserved caramelized onions. YUMMY!!!
SWEET POTATOES WITH CARAMELIZED ONIONS
Baked sweet potatoes are topped with slow cooked caramelized onions and red bell peppers. Serve with a dollop of sour cream or plain yogurt. Use large sweet potatoes for a delicious meatless main dish.

- Preheat an oven to 450 degrees F (230 degrees C). Scrub and dry the sweet potatoes, then prick several times with a fork and place onto a baking sheet. Bake in the preheated oven until the sweet potatoes are easily pierced with a fork, 50 minutes to 1 hour.
- Heat the oil in a large skillet over medium heat. Stir in the onion and bell pepper; cook and stir until the onion has softened and turned translucent, about 5 minutes. Reduce heat to medium-low, and continue cooking and stirring until the onion is very tender and dark brown, 20 to 30 minutes more.
- Split open the baked sweet potatoes and top with the onion mixture, salt, pepper, and a dollop of sour cream.

SWEET POTATOES WITH ONIONS AND TOMATOES
Steps:
- In a large pan, fry the onions in the oil until soft. Add the garlic, and when the aroma rises, add the tomatoes and ginger.
- Cut the sweet potatoes into 1-inch cubes, and put them in the pan with the cilantro. Add about 1 1/2 cups water, or enough to half-cover the potatoes, and season with salt and pepper. Cook, uncovered, for 15 minutes, until the potatoes are tender and the liquid has almost evaporated, turning the potatoes over once.
- Serve hot or cold.
