SWEET & SALTY HAWAIIAN CHICKEN

This recipe comes from a cookbook made up of Lancaster County recipes. It is very simple to make and does not take a lot of time. I love the tangy taste of the pineapple and the 57 sauce. I used boneless, skinless, chicken tenders. I think it's better to use smaller pieces of chicken instead of whole breasts, as they would tend to be dry. Very good served with rice!

Sweet & Salty Hawaiian Chicken image

Steps:

  • Place chicken in a 7x12 inch baking dish.
  • Sprinkle with salt and pepper.
  • Bake at 400 degrees for 30 minutes.
  • Drain pineapple, reserving 2 tablespoons of juice.
  • Combine reserverd pineapple juice, Heinz 57 sauce, and honey.
  • Pour over chicken, and bake an additional 25 minutes, basting often.
  • Arrange pineapples over chicken and bake an additional 10 minutes.
  • Drain off excess fat from sauce.
  • Serve by spooning sauce over chicken.

This is a family fave and so easy to do! I like to serve it with brown rice, but you can put it over anything.

Steps:

  • Combine pineapple juice, brown sugar and soy sauce; mix well.
  • Stir in chicken pieces, coating well.
  • Pour into crock pot and cook on low for 6-8 hours.
  • Serve over rice.
  • If desired, you may also add chunks of pineapple, bell pepper, sliced carrots, onion -- .

Sweet, Sticky and Spicy Chicken image

Steps:

  • Mix together brown sugar, honey, soy sauce, ginger, garlic and hot sauce in a small bowl.
  • Lightly salt and pepper the chicken strips.
  • Heat oil in a large skillet over medium heat. Add chicken strips and brown on both sides, about 1 minute per side. Pour the sauce over the chicken. Simmer uncovered until the sauce thickens, 8 to 10 minutes.
