Steps:

  • Cook bacon in a large nonstick skillet over medium-high heat until fat begins to render, about 2 minutes. Add 3 tablespoons oil, potatoes, onion, chard stems, and rosemary; season with salt. Cook until potatoes are tender and browned in places, 13 to 15 minutes. Stir in chard leaves and garlic, season with pepper, and cook, stirring a few times, until leaves are tender, about 3 minutes. Transfer to a serving dish; loosely cover to keep warm.
  • Add remaining 1 tablespoon oil to skillet and place over medium heat. When oil shimmers, add eggs, season with salt, and cook, stirring frequently, until just set, about 1 minute. Serve with potato mixture and salsa.

3 ounces bacon (3 strips), chopped
1/4 cup extra-virgin olive oil
1 pound baby Yukon Gold potatoes, sliced into 1/4-inch rounds
1 small onion, halved and sliced (1 1/2 cups)
1 bunch Swiss chard (8 ounces), stems chopped, leaves thinly sliced
1 tablespoon chopped fresh rosemary leaves
Kosher salt and freshly ground pepper
1 tablespoon minced garlic (from 2 to 3 cloves)
8 large eggs, beaten
Salsa or hot sauce, for serving

SWISS CHARD SCRAMBLE

I found this in the Relish.com newspaper supplement this week and want to try it. If you try it before I do, please review. Looks good but it also sounds like it needs more spice.

GARLICKY SWISS CHARD

There's really no secret to making excellent sautéed greens: just good olive oil, salt, loads of garlic and a jolt of red pepper flakes. This method works with pretty much any green too - broccoli, broccoli rabe, kale, spinach, collards, brussels sprouts or green beans - so you've really no excuse not to get your daily dose of vegetables. Serve it as a side to any roasted or grilled meat, or over a mound of creamy polenta that's been crowned with a fried egg.

Steps:

  • Stack chard leaves on top of one another (you can make several piles) and slice them into 1/4-inch strips.
  • Heat oil in a very large skillet (or use a soup pot). Add garlic and red pepper flakes and sauté for 30 seconds, until garlic is fragrant. Stir in the chard, coating it in oil. Cover pan and let cook for about 2 minutes, until chard is wilted. Uncover, stir and cook for 2 minutes longer. Season with salt.

THE BEST SWISS CHARD RECIPES - MARTHA STEWART

From marthastewart.com
  • Cheesy Stove-Top Barley and Chard. In this one-pot vegetarian dinner, chard brightens a cheesy take on risotto with barley standing in for the usual arborio rice.
  • Rolled Stuffed Salmon. It's hard to decide which ingredient steals the show here: the creamy Dijon and Swiss-Chard filling or the omega-packed salmon. This main course looks fancy, but it's quite easy to put together and makes a wonderful centerpiece at a holiday meal or other special occasion.
  • Late-Summer-Vegetable Minestrone. Homemade minestrone doesn't need to lean on store-bought broth. In this recipe, the flavorful broth builds from the bouquet of vegetables in the soup.
  • Skillet Pizza with Eggplant and Greens. It's time for a pizza topping upgrade. While we don't often see Swiss chard on the menu at our local pizza joint, we think it deserves a spot.
  • Creamy Swiss Chard with Coconut. The earthy notes of Swiss chard pair well with creamy ingredients—and that doesn't just mean butter and cheese. In this dairy-free dish, wilted greens are coated in creamy coconut milk with a hint of spice from garlic, ginger, and hot chile peppers.
