Bircher Muesli (Swiss Oatmeal) image

Steps:

  • In a large bowl, combine the rolled oats, orange juice, milk, sugar, honey, yogurt, vanilla essence and sultanas.
  • Mix well, cover, and either refrigerate or leave in a cool place overnight.
  • The next morning, whip the cream, and fold it through the muesli with the slivered almonds (and grated apple if desired).
  • If the consistency is firmer than you prefer, add more milk or cream to taste.
  • Sprinkle with cinnamon or nutmeg (optional).
  • Serve with fresh fruit.

3 cups rolled oats
3/4 cup fresh orange juice
1 1/3 cups milk (you can use low-fat or soy if preferred)
2 tablespoons sugar
2 tablespoons honey
1/2 cup plain yogurt
1/2 teaspoon vanilla essence
1/4 cup sultana
1/2 cup light cream (for whipping)
2 tablespoons slivered almonds
1 -2 granny smith apple, peeled and grated (optional)
ground nutmeg (optional) or cinnamon (optional)
1 -2 cup mixed fresh fruit, peeled and diced (such as raspberries, strawberries, melon, apple, banana, grapes, Kiwi fruit, pineapple, mango)

SWISS OATMEAL

Fantasticly Enhanced oatmeal. Dry mixture will keep for up to 2 months. Suggest dried fruit ingredient be Berries N' Cherries (chopped). Found recipe years ago in "What's For Breakfast - Light & Easy Morning Meals For Busy People". Prep time is making the mix (one time)

Steps:

  • Mix all ingredients together.
  • Store in airtight container at room temperature for up to 2 months.
  • Prep for 1 serving: Bring 1 cup water to boil in small saucepan and add 1/2 cup mix.
  • Cook stirring frequently for 1 minute.
  • Cover and let stand 2 minutes.
  • Note: Personally, I use the microwave.
  • 1/3 cup mix to 2/3 cup water.
  • Put the water and mix in a bowl.
  • Stir.
  • Nuke on high until oatmeal bubbles to (and just about across) the top of the bowl (@1 1/2 minutes).
  • Stir.
  • Let sit for a minute.
  • Add milk, sugar, or whatever else seems interesting.

Steps:

  • In a medium-sized bowl, soak oats in milk in a covered container in the refrigerator overnight. In the morning, drain and discard any remaining liquid. Stir in ¾ cup yogurt, dried fruit, banana and apple. For prettiest presentation, spoon a dollop more of yogurt on top of each serving and sprinkle the berries and toasted almonds over the top.

1 cup uncooked old-fashioned rolled oats
1/2 cup skim milk, substitute almond or soy milk if you like
3/4 cup non-fat vanilla yogurt, substitute soy, or Greek, or whatever type you like best
2 tablespoons dried cranberries
1 tablespoon dried currants
1/2 Granny Smith apple, cored, peeled and chopped
1/2 banana, chopped
Dollop of yogurt to top each serving
1 tablespoon toasted almonds, chopped
1/4 cup fresh strawberries, sliced
1/4 cup fresh blueberries

  • In a medium bowl, combine the jumbo rolled oats and apple juice. Cover, and leave in the refrigerator overnight.
  • In the morning, grate 2 apples (including the peel), and mix into the bircher muesli. I use one red and one green for the photos, but both varieties work. See post for more info.
  • After the bircher has soaked overnight, serve with your favorite toppings. I use a spoonful of regular yogurt, then add on walnuts, sunflower seeds, pepitas, brown and golden flax seeds, raisins and cranberries. You can also add in a swirl of jam if you like.
