Steps:

  • Put the yogurt into a small bowl and add the Tandoori Masala, lime juice and salt. Stir well and serve with chips or roti.
  • Grind the cumin seeds, coriander seeds, smoked paprika, garam masala, garlic powder, red chili powder, fenugreek seeds, ground ginger, turmeric, cardamom, cloves and cinnamon stick in an electric spice grinder. Store in an airtight container.

1 cup plain yogurt
1 tablespoon Tandoori Masala, recipe follows
Juice of 1/2 a lime
A pinch of salt
Chips or roti, for serving
1/4 cup cumin seeds
1/4 cup coriander seeds
3 tablespoons smoked paprika
2 tablespoons garam masala
2 teaspoons garlic powder
1 teaspoon red chili powder
1 teaspoon fenugreek seeds
1 teaspoon ground ginger
1 teaspoon turmeric
8 green cardamom pods
5 whole cloves
1/2-inch piece cinnamon stick

Steps:

  • Peel and prepare the shrimps. Stir lime juice and fish sauce, add pepper and marinate the shrimps for 15 minutes.
  • Heat sesame oil in a pot and roast the mashed garlic slightly. Add galangal and finely cut lemon grass, roast slightly for another minute. Add chopped plantain and leek and fill up with vegetabel stock, carrot juice and tandoory paste. Boil the soup up and let it simmer for 30 minutes.
  • Heat frying pan and roast shrimps gently for 2 to 3 minutes on each side. Skewer 2 shrimps on 1 lemon grass stalk.
  • Puree the soup with a blender and fill it into 4 bowls, place lemon grass stalk over bowl as decoration.

  • If preparing chickpeas, preheat oven to 375 degrees F (190 C), and add rinsed and dried chickpeas to a small mixing bowl. Top with coconut oil, salt, tandoori masala, and coconut sugar. Toss to combine, and sample a chickpea. Taste and adjust seasonings as needed.
  • Spread onto a bare baking sheet and bake for 20-25 minutes, or until deep golden brown and fragrant. Set aside to cool.

  • Place 4 c cauliflower in a large bowl and coat with cooking spray; toss with 2 tsp curry powder and 1/2 tsp salt. Spread cauliflower on prepared pan; roast, stirring once halfway through, 30 minutes.
  • While cauliflower cooks, heat oil in a large soup pot. Add onion and remaining 1/2 tsp salt; cook, stirring often, until slightly softened, 5 minutes. Add garlic, ginger, mustard seed, cumin seed and remaining 1/2 tsp curry powder (or more to taste); cook, stirring frequently, 1 minute.
  • Add remaining 4 c raw cauliflower florets and broth to pot; increase heat to high and bring to a boil over high heat. Reduce heat to medium-low; simmer, uncovered, until cauliflower is extremely soft, 15-20 minutes.
