TANGO STUFFED TOMATOES (SOUTH AMERICAN CUISINE)

Another "simply delicioso" recipe from Ingrid Hoffmann. A very tasty and pretty side dish.

Tango Stuffed Tomatoes (South American Cuisine) image

Steps:

  • Preheat oven to 350 degrees.
  • Cut off top third of each tomato. Scoop out seeds, juice and pulp from and discard. Set tomato "shell" aside to stuff later.
  • Chop tomato top up and set aside.
  • In medium nonstick skillet, saute chorizo in olive oil, breaking it up with a spoon as it cooks.
  • When browned all over, add onion to skillet and cook until soft, stirring frequently.
  • Add garlic, celery, and poblano pepper and cook for another 2 minutes, stirring to combine well.
  • Add reserved chopped tomato tops, salt, and pepper and stir for another minute.
  • Remove skillet from heat. Mix in 2 tablespoons cilantro, bread crumbs, and pepper jack cheese.
  • Using a large spoon, stuff mixture into tomatoes, packing down firmly.
  • Top with Parmesan and place tomatoes in oiled baking dish.
  • Bake until heated through and cheese turns golden, approximately 20 minutes.
  • Sprinkle with remaining 1 tablespoon of cilantro and serve.

8 ounces uncooked chorizo sausage
2 tablespoons olive oil
1 medium white onion, finely chopped
2 celery ribs, finely chopped
1 poblano pepper, finely chopped (may substitute green bell pepper)
2 garlic cloves, finely chopped
coarse salt & freshly ground black pepper
3 tablespoons chopped cilantro leaves
1/2 cup seasoned dry bread crumb
1 cup grated monterey jack pepper cheese
1/4 cup grated parmesan cheese

Steps:

  • Toss salad greens, cucumber, tomatoes, red onions, olives, and croutons with Honey-Lime Vinaigrette. Evenly distribute salmon on the top of salad and sprinkle with crumbled feta cheese.
  • Place the lime juice, vinegar, and egg in a blender. Run on low and slowly drizzle in the oil and honey until the mixture is slightly thick. Add salt and pepper and refrigerate for 12 hours before serving.

Steps:

  • Combine all ingredients in a small non-reactive saucepan over medium heat, stirring, until boiling. Reduce heat to low and simmer for 5 minutes, stirring occasionally. Set aside to cool. Pour into a clean covered jar and refrigerate.
  • Makes 1 1/4 cups or 10 (2-tablespoon) servings.

  • While waiting for the water to boil, begin the tomato sauce in a separate skillet. Mince a clove of garlic and combine it with the olive oil, basil, oregano, salt, rosemary, thyme, crushed red pepper, and cracked black pepper. Heat over a medium flame. Stir the mixture and allow it to start sizzling. Stir and sizzle for about one minute.
  • Add the tomato paste, turn the heat down to medium-low, and continue to cook and stir until the mixture turns a darker shade of red (about 2 minutes more). Turn off the heat and then stir in the honey.
  • When the water begins to boil hard, add the spaghetti. Cook for 7-10 minutes or until tender. Once the pasta is tender, drain briefly and then add it to the skillet with the tomato sauce. Stir to coat. (Reserve about 1/2 cup of the starchy pasta cooking water to add back into the pasta if it becomes dry while mixing with the tomato sauce).
